Cancer and Ketogenic Diet
Did you know that men can have ‘estrogen dominance’ too? Yep, one of the causes of prostate cancer is excess estrogen in men. (reference). Both androgen and estrogen have been reported to stimulate proliferation of cultured prostate cancer cells.
This diagram demonstrates estrogenic carcinogenicity in the prostate. The numbers refer to references supporting the corresponding pathway of estrogenic action. (To find the references and diagram click HERE).
A well-formulated ketogenic diet has an intense and fast effect on cancer. All of your body’s cells, including cancer cells are fueled by glucose. Conversely, cancer cells have one huge mortal flaw; they do not have the metabolic adaptability to be fueled off of ketones, but your healthy cells can thrive on ketones. Therefore, since cancer cells need glucose to thrive, and carbohydrates turn into glucose in your body, then cutting out carbs literally starves the cancer cells.
HEALTH TIP: Excess bad estrogen in the liver and fat cells is a leading cause of breast, thyroid and uterine cancer in women, as well as prostate cancer in men. Cutting out all of the estrogenic factors is extremely important (which I list in my Keto-Adapted book). Unlike healthy cells that can get energy by metabolizing sugar in the mitochondria, cancer cells appeared to fuel themselves only through glycolysis, a less-efficient means of creating energy through the fermentation of sugar in the cytoplasm.
If most aggressive cancers rely on the fermentation of sugar for growing and dividing, then take away the sugar and the cancer can stop spreading. Meanwhile, normal body and brain cells switch to generate energy from fatty molecules called ketones, the body’s main source of energy on a fat-rich diet.

WHATCHAMACALLIT
Peanut Butter Crispy Center:
3/4 cup Swerve (or erythritol and 1/2 tsp stevia glycerite)
1/2 cup butter
1/2 cup natural Peanut Butter
3 cups Crispy Fat Bomb
Combine the first 3 ingredients in a saucepan and warm until melted and mixed well. Add the crispy fat bomb and mix. Form tinfoil into candy bar shapes. Pour batter into the tinfoil shape. Let cool in fridge or freezer until set.
Caramel Layer:
1/2 cup xylitol (or Just Like Sugar): Swerve works but will be grainy
3 TBS butter
1/4 cup heavy whipping cream
Before you begin, make sure you have everything ready to go – the cream and the butter next to the pan, ready to put in. If you don’t work fast, the xylitol will burn. You may want to wear oven mitts; the caramelized sugar will be much hotter than boiling water. Heat xylitol on moderately high heat in a heavy-bottomed 2-quart or 3-quart saucepan. As it begins to melt, stir vigorously with a whisk or wooden spoon. As soon as it comes to a boil, stop stirring. You can swirl the pan a bit if you want, from this point on. As soon as all of the xyltiol crystals have melted (the liquid should be dark amber in color), immediately add the butter to the pan. Whisk until the butter has melted. Once the butter has melted, take the pan off the heat. Count to three, then slowly add the cream to the pan and continue to whisk to incorporate. Note than when you add the butter and the cream, the mixture will foam up considerably. Whisk until caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a glass mason jar and let sit to cool to room temperature. Store in the refrigerator for up to 2 weeks. Add a layer of 1 TBS caramel on top of the whey crisp mold. Set in freezer to set up.
CHOCOLATE SAUCE:
2 TBS butter or coconut oil
1 oz unsweetened baking chocolate
5 TBS heavy cream
1/4 cup Swerve (or erythritol) 1 tsp stevia glycerite
Place the butter and chopped chocolate in a double boiler (or in a heat safe dish over a pot of boiling water). Stir well until just melted (don’t burn the chocolate!), add in the cream, and sweetener. Stir until smooth and thick. Take frozen whey crisp mold out of the freezer and roll in the chocolate. Set the candy bar on parchment paper to cool and set. Makes 12 servings.
NUTRITIONAL COMPARISON (per serving)
Traditional Whatchamacallit = 222 calories, 28.5 carbs, 0.9 fiber
“Heathified” Whatchamacallit = 210 calories, 3.8 carbs, 1.5 fiber
Does it matter if the whey crisps are chocolate or plain…which do you recommend? This recipe looks fantastic!!!!

Maria – is it ok that the whey crisps have corn starch in them? They seem very versatile. You may answer this in your metabolism book – which is in my amazon cart – but I thought I would ask.
Also – off topic – Is there also more information about low cholesterol in your book? I have low cholesterol, but a healthy ratio. And now I follow a grain-free, sugar free lifestyle with lots of healthy fats that I used to shy away from. I’m interested to see how my stats may have changed.

Too low of cholesterol is linked to cancer…but if your ratio is good, that should be ok. Lots of things go into answering that question. I would need a full consult to answer that better:)
Why do all the tasty looking diabetic friendly recipes include fake sugars?
Because if you used Sugar it wouldn’t be diabetic friendly. Erythritol is just as natural as sugar. It’s made by fermenting vegetable sugars. Stevia comes from the stevia plant.
Should the erythritol be powdered? I’ve never had much luck with it in recipes unless it was powdered. Does it melt okay in granular form??

I’m wondering if the caramel layer would work with anything other than xylitol or Just Like Sugar? Maybe Swerve? I just ordered some and don’t want to order anything else right now but NEED to make these =)
I sometimes make my caramel with confectioners Swerve (or finely ground granular Swerve). There will just be a little grit as the erythrtiol will crystallize a bit. I don’t mind it though. 🙂
I have to ask, what are whey crisps? Where would I find them? Also, I don’t know anything about swerve but I heard it was GMO is that true?
Whey crips are these, but they aren’t is stock often (although when they are, a tub lasts a long time).
No, there are no GMO sources in Swerve. 🙂

How large is a serving? I made 12 candy bar shapes AND a 7 x 9 pan. Tastes great but my whey crisps are really crunchy. My kids are loving so many of Maria’s recipes….my hubby is being a bit stubborn though.
