PEPPERMINT FUDGE
I just love Christmas! I sure miss my kayak and bike, but I do like slowing down and enjoying time in the kitchen with friends and family.
It is such a special time of the year however this year I have been so busy with work it is almost Christmas and I feel that I haven’t celebrated as much as I have in the past. So I decided to put work on hold this weekend and ask my girlfriends over to make massive amounts of Keto goodies. I told them to pick out any recipes they want to make and bring butter!
I can’t wait!!!!
But I could use your help… what is your favorite Christmas movie? I love a great Christmas movie!!!
If you love chocolate and mint together, this is one tasty fat bomb you will not want to forgo!
Easy Peppermint Fudge
Ingredients
- 1 3/4 cups heavy cream or full-fat coconut cream: top of the milk: if dairy sensitive
- 3/4 cup Natural Sweetener or to desired sweetness
- 1 teaspoon stevia glycerite
- 1 teaspoon peppermint extract or other extract like cherry
- 6 ounces unsweetened baking chocolate chopped fine
Instructions
- Place a piece of parchment paper into an 8x8 inch pan.
- Grease the parchment lightly for easy removal.
- In a small saucepan over medium heat, stir together the heavy cream, natural sweeteners and extract. Bring to a light simmer then remove from heat and add the finely chopped chocolate. Stir until smooth and the chocolate is totally melted. Taste and adjust sweetness to your liking.
- Pour chocolate mixture into the prepared pan and spread evenly to the edges. Place pan into the freezer for about 30 minutes or until firm.
- Cover and refrigerate until set, about 2 hours or overnight. Cut into 18 squares.
- NOTE: If the mixture is too thin, add 4 tablespoons cream cheese (or Kite Hill cream cheese if dairy free) to the mixture and allow to set.

Favorite Christmas movie(s)? There’s no way to pick just one! I like a lot of the old fashioned ones: It Happened on Fifth Avenue, Meet Me in St. Louis, The Man Who Came to Dinner, It’s a Wonderful Life, Joyeax Noel, Desk Set and We’re No Angels. But it’s just not Christmas without A Charlie Brown Christmas and A Christmas Carol!

Thanks for the yummy recipe – I’m going to make these this weekend! Favorite Christmas movies for a good laugh are “Elf” and “Scrooged” with Bill Murray, but my all-time favorite is “Christmas Vacation” with Chevy Chase. I also love the classics like “It’s a Wonderful Life” and “A Christmas Story.” Have fun this weekend!
Despite the fact that I’m quickly approaching 40, “The Muppet Christmas Carol” is still my favorite Christmas movie. And of course there’s the classics, “It’s a Wonderful Life” and “Miracle on 34th Street” (my favorite’s the 1947 version).

Maria – I used the full fat coconut milk and 1/4 cup Swerve Confectioner’s, froze it for an hour and put it in the fridge over night, and it’s still soft. How solid is it supposed to be? It’s like a thick pudding at this point. :/ The batter was delicious, though! 🙂
Mine did the same thing and I used 3/4 cup swerve.
Next time use just the cream off the top of the can;)

I made this with heavy cream after trying coconut milk and it turned out perfect (took a little longer than a day to set) but since right now baking chocolate is getting scarce at my grocery store I was wondering if I can use cocoa powder instead?
No. The chocolate hardens it.
Hi Maria – I just wanted to tell you I made this recipe this past weekend, and it came out amazing! I didn’t have enough heavy cream to do it all with heavy cream, so I ended up using 1 cup heavy cream and 1 small can of organic coconut cream, which came out to about 3/4 of a cup. The texture and flavor came out perfectly smooth and creamy, just the way I like it! This is going to be a go-to fathomb recipe for me. The perfect way to end a meal!

Do you think you could use Erythritol instead of Swerve? I was thinking about grinding it and make it like confectionery type sugar replacement. Would Swerve be better tasting, or why did you choose to use this sugar replacement?
I have a question when counting the carb content of erythritol . . . it’s all carb? One little packet of Truvia for my coffee is pure erythritol & stevia but is 3 g of carb.
You can subtract. It is non digestible.
Hi there! I just made this (it’s still cooling, I can’t wait!), but I’m getting a totally different calorie count. 1600 calories from the cream (book says 2 cups) and 1080 for the chocolate makes for about 150 calories per serving. The calorie count here (the book says 99) must be with coconut milk, even though you list that as a secondary choice for an ingredient? Just want to make sure I’m not losing it.
