Low Carb Ice Cream Sandwich
Try my low carb ice cream sandwich recipe.
1 3/4 cup Allulose
1 tsp stevia glycerite (omit if using Swerve)
1 cup unsweetened cocoa powder
2 eggs
1/4 tsp Celtic sea salt
2 tsp vanillaPreheat the oven to 350 degrees F. In a medium bowl, cream the butter, erythritol, stevia and the Just Like Sugar together. Add in the eggs, stir until well combined. Finally mix in the cocoa powder, salt and vanilla. Form 2 inch balls. Place on a cookie sheet about 2 inches apart. Bake for 10 minutes. Allow to cool on the cookie sheet before removing. Makes 24 cookies.
2 oz heavy cream or coconut milk
2 oz cream cheese or coconut cream
3 TBS Natural creamy peanut butter
2-4 TBS Allulose (keeps ice cream soft)
1 tsp stevia glycerite
Healthy Choice Bar = 130 calories, 3g fat, 2g protein, 24 carbs, 1g fiber
“Healthified” Bar = 126 calories, 9g fat, 8g protein, 3.5 carbs, 1.5g fiber

Cancer and Ketogenic Diet
Did you know that men can have ‘estrogen dominance’ too? Yep, one of the causes of prostate cancer is excess estrogen in men. (reference). Both androgen and estrogen have been reported to stimulate proliferation of cultured prostate cancer cells.

A well-formulated ketogenic diet has an intense and fast effect on cancer. All of your body’s cells, including cancer cells are fueled by glucose. Conversely, cancer cells have one huge mortal flaw; they do not have the metabolic adaptability to be fueled off of ketones, but your healthy cells can thrive on ketones. Therefore, since cancer cells need glucose to thrive, and carbohydrates turn into glucose in your body, then cutting out carbs literally starves the cancer cells.
HEALTH TIP: Excess bad estrogen in the liver and fat cells is a leading cause of breast, thyroid and uterine cancer in women, as well as prostate cancer in men. If most aggressive cancers rely on the fermentation of sugar for growing and dividing, then take away the sugar and the cancer can stop spreading. Meanwhile, normal body and brain cells switch to generate energy from fatty molecules called ketones, the body’s main source of energy on a fat-rich diet.

I’ve recently been reading all sorts of “Scary” things about Truvia and its’ effects on our bodies. What is your take on the use of Truvia? I love all your great recipes! My family absolutely ADORED the Rhubarb Crisp that I served with Rhubarb sauce on the top!
I am also switching my recipes to use erythritol and stevia. I actually never used Truvia, but it is more easily found in grocery stores.

I know that this post is old but I want to try making my own ice cream. Since this is my first time following this recipe, I was wondering if JLS or Xylitol can be substituted for Swerve or Erythritol since I currently do have either of them in my pantry. Your thoughts?
Yes, either sub will work but the JLS will keep it softer in the freezer. 🙂

Wondering about heavy cream. It has no sugars/carbs in it and I wonder if it is something to avoid if face acne-type breakout is a problem?
Well, avoiding all dairy is one thing that can help a breakout issue. Most clients can reintroduce it after a month or two though.
Thank you. I have eliminated all other dairy than the heavy cream, but the breakouts I have are in the center of my face and nose. Almost rash-like. Any other cause that might come to mind? I have added L-carnitine, l-glutamine, D3, niacin, potasium, magnesium glycinate, B complex and a multivitamin NOW brand EVE. Almond and coconut milk, MCT oil. Numbers on the scale are slowly coming down. Also watching carb (20-50 gram) and Protein 30-80 gram/day in a 1500 calorie average. No fruits, minimal vegetables, minimal baked goods, energy bars, etc. Only from your cookbooks. The issue with my skin is a mystery. Thanks so much! You fan club at MC on my floor has continued to grow!
