HOW TO MAKE WATERMELON SORBET
To make my Keto Watermelon Sorbet, I used watermelon LMNT!
It is unbelievable how perfect using LMNT works for a delicious creamy sorbet!
You can use any flavor you want. Try the raspberry LMNT with raspberry extract instead of watermelon! Be creative! Orange LMNT with vanilla extract for a Creamsicle Sorbet! Super delicious!

Watermelon Sorbet
Equipment
Ingredients
- 1 1/2 cups unsweetened macadamia nut milk divided (or unsweetened coconut milk)
- 2 teaspooons Further Food gelatin
- 1/2 cup allulose
- 1 packet watermelon LMNT (or other flavor)
- 2 teaspoons watermelon extract (or other extract like raspberry)
Instructions
- Place 1/4 cup of the unsweetened macadamia nut milk into a small saucepot. Whisk in the gelatin and allow to soften for a minute. Then heat over medium high heat until it just comes to a simmer. Remove from heat and chill for 10 minutes.
- Place all the ingredients into the food processor and blend the mixture until smooth. Taste and adjust sweetness to your liking.
- Place the mixture in an ice cream maker and churn according to instructions.
- Once it is done churning, place it into the freezer for at least another hour. Transfer the sorbet to the fridge for 20 minutes before serving.

“Maria challenged me to go dairy free last year in Italy to break a 4 year stall. This seemed unsurmountable to me due to my schedule.Â
I found Maria in the fall of 2018 and started my keto journey to help with a lot of inflammation that started creeping up in my body. I have always counted calories and stayed away from processed foods and sweets to maintain a healthy body and stave off migraines. But as I got older, this method stopped working and I was baffled. My weight started increasing despite my eating fewer and fewer calories. My migraines became more frequent and harder to control.
These are the types of migraines that cause so much pain that I start throwing up and do not stop until I end up in the ER getting IV fluids and medications.
I started keto with skepticism and was happy to find my skepticism was unfounded. I dropped 30 pounds quickly and my migraines disappeared! But then the stall…. Fast forward to March when Maria and Craig launched the 30 day challenge. I decided to use it as a personal food experiment. Experimenting with my 59 year old body to see if it was capable of still responding. Getting into the groove was a little messy for the first week, getting organized with food and meal plans, but I was determined to fight through and make it work. Boy was I glad I did! I lost 10 pounds during the 30 days, but more importantly I learned so much. This challenge opened up my recipe repertoire to delicious foods that I might not have dared try (it looked like they took a lot of time to prepare, but they didn’t). I was reminded that calories are important but macros are more important!Â
I am now expanding my experiment to see if I can come up with the meal plans using Craig’s wonderful template and recipe index. So far I’m down 3 more pounds and enjoying the process!Â

I only have canned coconut milk and do not have macadamia nut milk, can I use almond milk instead?
