HOW TO MAKE THE BEST KETO COOKIE CUT OUTS

The BEST Keto Cookie Cut Outs
Ingredients
COOKIES:
- 1/2 cup butter softened
- 1 cup Natural Sweetener see NOTE
- 1 large egg
- 3 cups blanched almond flour
- 1 1/2 tablespoons Further Food gelatin use code MariaMindBody to save
- 1 teaspoon baking soda
- 3/4 teaspoon Redmond Real salt
FROSTING:
- 1/2 cup butter softened
- 4 ounces cream cheese softened
- 3/4 cup Natural Sweetener or equivalent
- 1 teaspoon almond extract or vanilla extract
- 1 teaspoon lemon juice
- 1/4 teaspoon Redmond Real Salt
OPTIONAL:
- Natural Food coloring
Instructions
- In a large bowl, place the butter and sweetener and use a hand mixer to blend on high until fluffy. Add the egg and blend another minute.
- In another bowl, place the almond flour, gelatin, baking soda and salt. Stir well to combine.
- Add the dry ingredients to the butter mixture and mix until well combined.
- Form into a ball, cover and chill for at least one hour or overnight.
- Minutes before you are ready to bake the cookies, preheat oven to 325 degrees F (NOTE: If using allulose preheat to 300 degrees F). Place parchment onto 2 large baking sheets. Set aside.
- Place the dough in between 2 pieces of parchment and use a rolling pin to roll the dough out to 1/4 of an inch thickness. Remove the top parchment and use cookie cutters to make cookies. Place the cookies onto the prepared baking sheets.
- Bake for 10-12 minutes or until the edges just begin to brown.
- Remove from the oven and allow the cookies cool before removing from the baking sheets.
- To make the frosting. Using a hand mixer, beat the sweetener, butter, softened cream cheese in a medium-sized bowl until smooth. Add the extracts, lemon juice and salt; beat until well combined. Taste and adjust sweetness to your liking. Add natural food coloring if desired.
- Once the cookie cut outs are completely cooled, decorate with frosting!

Yes, they do. Any ingredient listed with a measurement (1 tsp, 1/2 cup, etc) is included in the macro calculations 🙂

These cookies are so delicious 😋 I made them specifically for my daughter, who has PCOS, so she could enjoy a treat on Valentine’s Day! Quick question, they came out amazing. No issues with the cookie cutters but after I took them out of the oven, they never firmed up. So soft that some break as you pick them up. What did I do wrong??!!
Hmm, I’m not sure. Try reducing the amount of gelatin next time 🙂

Not sure what I did or did not do, the dough is so crumbly even after leaving overnight in the fridge that I can only get 2 or 3 cut outs dough is too crumbly.
Any suggestions on how to fix this or what I did or what I did and how I can correct it?

Add more liquid. Hopefully it will help the dough form. Just a small amount.
