OPTIONAL:

  • blueberries fresh

Instructions
 

  • Preheat oven to 350 degrees F. Place a piece of parchment onto a large casserole dish. Set aside. 
  • Place all the ingredients except the blueberries into a food processor and puree until smooth. Pour the mixture into the prepared dish. Top with blueberries if desired. 
  • Bake for 40-45 minutes or until cooked through and a toothpick inserted into the center comes out clean. Enjoy!

    I made this recipe and it never setup. It was very watery even after I cooked it for 1 hour. Not sure what went wrong. We will eat it as it taste really good anyway.

      Sorry about that! It could be the brand of cottage cheese was too watery. I use Daisy Brand Low Fat cottage cheese and it turns out every time. 🙏

    Second attempt and I use Daisy Low Fat cottage cheese. It never bakes. After 75 minutes, it’s still a water mess. Any thoughts?? Maybe a higher temperature?? Also, what size dish are you using?? I guessed a 9 x 9, but may be larger, meaning my mixture is too deep in the dish?? Not sure how to make this work 🙁

      I’m so sorry, I’m not sure. It could be your oven doesn’t run as hot. All 11 of my recipe testers said it came out great for them, and I make this almost weekly and haven’t had that happen. A 9×9 dish is okay, but I think if you use a larger one the bars will be thinner and bake faster. That’s probably the issue.

        I just looked again and I think it’s probably a 9 x 13 (standard). The thickness is probably the issue. Going to try again with a larger dish, try moving to a lower rack in my oven, and see what happens. I’ve tasted my “disasters” and they taste too good not to try to get this to work.     I will definitely try this; however I’m confused by the use of low fat dairy products. I thought you had always used full fat products until recently??
