Flourless Cannoli Crepes

Ingredients
CANNOLI CREAM:
- 15 ounce ricotta cheese strained
- 1/2 cup powdered allulose
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon Redmond Real salt
- 1/2 cup heavy cream
FLOURLESS CREPES:
- 4 large eggs
- 2 tablespoons unsweetened macadamia nut milk (or heavy cream)
- 4 tablespoons Further Food gelatin
- 2 tablespoons Vanilla Equip Protein Powder (or chocolate)
- 1 tablespoon powdered allulose (or a drop of stevia glycerite) OPTIONAL
OPTIONAL GARNISH:
- 1 bar The Good Chocolate chopped into small pieces
Instructions
- Strain the ricotta by placing it in a nut milk bag in a colander, and using a heavy weight to apply pressure.
- Meanwhile, in a medium mixing bowl, combine the strained ricotta, powdered allulose, salt, cinnamon and vanilla extract. Mix using a mixer or spoon until combined. In a small bowl, jar, or measuring cup, whip the cream using a hand mixer, until it has medium stiff peaks. Fold the whipped cream into the ricotta mixture. Cover and chill for 20 minutes.
- To make the flourless crepes, place all of the ingredients for the crepes in a blender and combine until very smooth.
- Spray a crepe pan (click HERE to find) with avocado oil spray and heat over medium high heat. (note, the batter may get very thick, but once you put it on the hot skillet, the gelatin will melt).Once hot, pour one-quarter of the batter into the skillet. Cook until golden brown, about 2 minutes, then flip and cook until done, another 1 to 2 minutes. Remove from the skillet and repeat with additional cooking spray and batter.
- Add a large spoonful of the cannoli filling into a strip in the middle of each crepe. Fold in the two sides, and place seam side down on a plate. Stack the crepes, top with a dollop of whipped cream and garnish with chocolate pieces and serve immediately.

TESTIMONY OF THE DAY
“Picture on the left was taken on my birthday in mid June. At that point I had been doing carnivore diet for over 1.5 years but was stalled that whole time (my cake is Kelly Hogan’s oopsie cake with added strawberries).
I was following the “eat til your comfortably full and add a stick of butter on top of that” carnivores on YouTube. I even fell for the keto person that promotes extremely high fat and extremely low protein and ended up gaining 10 more pounds!
Thank God I only did 3 weeks and I was able to lose 5 of those 10 pounds after going back to high protein. But I couldn’t lose anything after that because I was still eating too much fat for maintenance but not fat loss.
Last month I started to listen to @mariaemmerich and @craig_emmerich on lowering fat macros for fat loss and PSMF. I tried it for one month and my goodness! I lost 10 pounds in that month alone.
The pic on the right (sorry it’s blurry) is of me yesterday, 4 weeks after following the Emmerich’s macros calculator and adding 2 PSMF days per week. I’m also wearing clothes that didn’t fit me a month ago!
