Easy Mocha Truffles

I love the holidays! It is a special time of year that I like to gather other keto friends to have a holiday baking party at my home. We all make our favorite holiday treat and then we all have a large dessert tray to bring to family gatherings.

One of my special treats that I made was my Mocha Truffles and everyone not only loved how yummy they were, they all loved how easy they were to make!

Easy Mocha Truffles

Ingredients
  

  • 1 cup butter
  • 1/3 cup powdered allulose (plus 1 teaspoon stevia glycerite if desired)
  • 8 ounces cream cheese softened
  • 2 scoops iced coffee Equip protein powder
  • 2 tablespoons heavy cream
  • 1 teaspoon rum extract (or Kahlua extract or vanilla)

  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • 2 ounces unsweetened baking chocolate chopped fine
  • 1/2 cup powdered allulose (and 1/2 teaspoon stevia glycerite if desired)
  • 1 teaspoon vanilla extract

Instructions
 

  • OPTIONAL (make brown butter for the truffles): In a large saucepan, melt the 1 cup of butter over medium-high heat and heat until it turns brown (not black), about 5 minutes. Add the allulose and stir until well combined, then remove the pan from the heat. If not making brown butter, place the softened butter and sweetener into a large bowl and use a hand mixer to combine.
  • Using a handheld mixer on low speed, mix in the cream cheese, Equip protein powder, heavy cream and extract until combined. Taste and adjust sweetness to your liking. Place in the refrigerator to chill and thicken overnight (or for 6 to 8 hours).
  • Remove from the fridge and roll into 1-inch balls. For an easy coating, just dust the balls in Equip Chocolate Protein powder to finish. If you prefer to coat the with chocolate, place the balls in the freezer while you make the chocolate coating.
  • Make the chocolate coating: In a medium-sized saucepan heat the heavy cream and butter until simmering. Remove from heat and add the finely chopped chocolate. Stir until the chocolate is melted and smooth, stir in the allulose and extract.
  • Remove the truffles from the freezer and dip them in the chocolate coating. Place the coated truffles in the fridge for a few minutes, until the chocolate is set. Store in an airtight container in the fridge for up to 1 week.

1️⃣ Don’t lie to yourself.  Track everything that goes in. 
You’re not hurting anyone but YOU when you cheat. You deserve better! 
2️⃣ Eat a hard boiled egg when you’re hungry. If you’re really “hungry”, that will be the best tasting egg you ever had! 
3️⃣ Eliminate hand to mouth eating. Can’t cut it with a knife and fork? Don’t eat it! 
4️⃣ Plan! ALWAYS have food on hand! Grilled chicken or pork, hard boiled eggs, Maria’s pudding, Maria’s Hawaiian rolls or her angel food cake slices. Fail to plan, plan to fail! 
5️⃣Forgive yourself and celebrate the small non scale victories. You deserve all the love 💗

    These look like fun, will definitely try for Christmas! Quick question- I’m not going to buy iced coffee protein but I have the chocolate one. Could I add some instant coffee or even prepared espresso to the mixture to make mocha? Thanks!
