Migraines and Headaches
When clients come to me pleading for help eliminating migraines, I grin because to me it is an easy fix and I know they are going to feel wonderful soon. I have clients wanting me to help eliminate their chronic headaches and migraines all the time. I have lots of tips and tricks up my sleeve so when I started having headaches, I was puzzled. It all started when I decided to see if I were a candidate for LASIK eye surgery (which I am not). The clinic requires you to wear your glasses for a few days which my glasses are a bit weak, but I still wore them for the required time.
Once I heard the bad news that I was not a candidate since my eyes are just too bad (I’m a -11 prescription), I put my contacts back in. That day, my 3 year old was being a typical 3 year old and I blamed my headache on his behavior. But when the headaches continued for the next 3 days, I knew something was wrong. I went to the eye doctor and yep! I was over-prescribed. I was SO ecstatic to go down a 0.5 because that meant I could wear “night and day” contacts (the kind that you can wear for a month without taking out). They don’t make “night and day” in a -11 but they do in a -10.5!!!
Anyway, my point is, there are numerous nutrition reasons for headaches and migraines but one thing that is often overlooked is our eyesight. So when nothing else is working, get your eyes checked! First off, add electorlytes. Dehydration and not enough quality salt are main causes of headaches. There are a few other major causes of severe headaches and migraines, and they all can be healed by a well-formulated keto-adapted diet as well as therapeutic doses of vitamins and minerals which you may be deficient in. I asked my husband if he missed any ice cream treats with our “healthified” lifestyle, and he mentioned Snicker’s Ice Cream Bars…yum! I remember those:)
It may seem like a lot of steps, but it really isn’t very hard.
ICE CREAM LAYER:
1 cup organic heavy whipping cream
8oz cream cheese
1/4 cup Allulose (keeps ice cream soft)
1/2 tsp Celtic sea salt (helps from hardening too much)
NOUGAT LAYER:
1/4 cup butter
1/4 cup Swerve
1/4 cup vanilla egg white protein
1 cup cream cheese
1/2 cup natural almond butter OR peanut butter
1 tsp vanilla
1 cup peanuts or almonds, chopped
CHOCOLATE LAYER:
2 TBS butter or coconut oil
1 oz unsweetened baking chocolate
8 TBS heavy cream
1/2 cup confectioners Swerve (or powdered erythritol)
1 tsp stevia glycerite
ICE CREAM LAYER: In a stand mixer or a large bowl, whip the cream. Add in the sweetener and softened cream cheese and salt until well combined. Line muffin tins with paper baking cups and place about 3-4 TBS into each liner. Chill in freezer while making Nougat Layer.
NOUGAT LAYER: In a saucepan boil 1/4 cup of butter, sweetener, and 1/4 cup whey protein together for about 5 minutes. Take off stove and add 1 cup cream cheese, 1/2 cup natural peanut butter, 1 tsp vanilla, and 1 1/2 cups salted and chopped peanuts. Pour over first layer that was chilling then place back in freezer.
CHOCOLATE LAYER: Place the erythritol in a coffee grinder and blend into a smooth powdered sugar texture (this is optional, but provides a smooth chocolate). Place the butter and chopped chocolate in a double boiler (or in a heat safe dish over a pot of boiling water). Stir well until just melted (don’t burn the chocolate!), add in the cream and sweetener. Stir until smooth and thick. Smooth over each ice cream bar. Place back in freezer to set.
NUTRITIONAL COMPARISON (per 50 gram bar)
Traditional Snicker’s Ice Cream Bar = 180 calories, 11g fat, 3g protein, 18g carbs, 1g fiber (17g effective carbs)
“Healthified” Bar = 200 calories, 18.2g fat, 7.6g protein, 3.1g carbs, 1g fiber (2.1g effective carbs)

These are amazing! I made them in miniature square silicone molds. With 42 in the batch, they’re only 1 net carb a piece. It takes a little time because of the freezing in between steps but it’s well worth it.

Thank you so much for posting this! I was on vacation with my husband’s family and they were EXTREMELY rude about the fact that I feed my children healthy food, while their kids are allowed to eat oreos and chips ahoy by the stack. I was starting to feel like maybe there was something wrong with me until I read this. It really made me feel a little more justified in wanting the best for myself and my children. I had a conversation today while in class. We talked about what I had packed in my kids lunches that day for school. ( Cheese, Black olives, cucumbers, brocoli, turkey, and almonds) A fellow student (a mom herself) chimed in from the back ground and said to me….That’s it? Man your poor kids. I was shocked. I asked what she meant and she said…kids deserve treats, kids should be allowed to be kids, I mean what’s wrong with a sandwich or some crackers, geez. I really had to bite my tongue, b/c I didn’t want to start a debate in the middle of class. But it is reeeeeeeally hard to keep biting my tongue and listen to moms complain about kids illness or allergies with one hand and hand them cheetos and suckers with the other. UGH!
So true about the illnesses with their damaged immune systems! WOW! I find it so amazing that people pump their kids full of chemicals, food dyes and sugar and WE are the bad parents for feeding them healthy food that will help their brains develop and help them thrive! Crazy! Kids palates develop based on what you feed them, just like everything when they are growing. Feed them sugar and crap and that is all they will want. Micah’s favorite snacks are sardines and Kale chips! Kai goes crazy for bone broth. Last I checked toddlers can’t shop so it’s up to us to decide what to feed them. 🙂
Dear Teresa, it is a sad day Indeed when we have to justify feeding our children well. When people object to truth…..they will defend themselves. No parent in The world believes that Oreos are healthy for a child…the issue is that most parents have not bee awakened to the fact that children are growing developing miraculous gifts…….that what they are given today not only affects today….but also the future…..they don’t think about how cells develop…..how dis-ease begins………but deep inside….when we allow ourselves to be still, when we look around at all the garbage out there……the truth does rise……but then we have to act :)……so a lot of people do not want to see…..stand in your truth lioness, your cubs are growing strong! As a life coach, I have the privilege of assisting people to personal truth…and I am humbled to see the ripples of family change begin…if my parents would have been awake, my summer at Fat Camp would never have been……Though I also would not be doing what I do….. so stand tall and spread seeds. This was so good. I can’t keep my family out of my “special” low carb treats !! I used simply jiffy PB and it separated and turned very oily. Same thing happened when I tried mr peanut bread, it was horrible, got really oily. It may have been the pb, but I won’t be trying that recipe again. I love this site, there are so many recipes to try, I am so excited!!! These snickers ice bream bars are to die for

OMG Maria, those look amazing! I don’t like many commercial ice cream treats, but Drumsticks and Snickers bars are a real weakness of mine. I’ll have to try this recipe out this summer.

Absolutely bowl licking good! The time it takes to wait is the hardest part of this recipe. I think the chocolate sauce alone is one I’ll make again and put in the ice cube trays for little chocolate bar treat.

Maria, Please Help! I made these and something went very wrong. I checked the recipe in the book against the recipe here and they seem to be the same. The nugget layer burned the first time. no boiling, straight to burn. dumped and started again on medium/low as opposed to medium, stirring continuously. The butter started to ooze out of the thick combo and sizzle (boil?) but then the whey was starting to stick and brown again so I yanked it off quickly even though it was only heated for 2 of the 5 minutes (boil time) . After adding the rest of the ingredients it was not pourable but scoopable (like cookie dough) and I had a LOT left over. The biggest problem was the chocolate sauce. I kept checking the recipe because mine was basically very sweet chocolate milk. I thought oh my gosh is it supposed to be 10 tsp instead of TBSP? Nope. I added a little xanthum gum & finally just ladled it over so as not to waste it. I’m hoping they taste good regardless of not looking as nice as yours. Also I used 16 regular muffin liners and really could have gotten more as they were pretty full just with the ice cream layer. That would have also used up the extra nugget. Love your recipes and this is the first “fail”. Thanks!

I am so thankful for you Maria! I am an RN whose diabetes was no longer managed well. A1C >10, bp high, cholesterol high, kidney problems, the eternal brain fog. I read diabetes solution by dr. Richard bernstein and found you. Nutritional ketosis is amazing! After only 5 weeks my sugars are normal, bp normal, heart rate normal, cholesterol normal, neuropathy resolving and I’ve list 14#!!! I’m telling all my diabetic patients about this. Love this recipe, made it a few days ago, so wonderful. My husband tasted it and said “tastes like Snickers ice cream bars…wow! Because of you i don’t miss my other life and i will stay on this life style forever. Thank you! Oh and thank you for the deep dish pizza recipe in you new cookbook which i just got…amazing!

has anyone tried to substitute half and half for the heavy cream in the ice cream layer? did it work?
So I had the “brilliant” idea to make these in a silicone mini-muffin pan. An hour into making these, I thought SURELY these aren’t worth the effort. However, I rarely waste ingredients and never give up, so I kept going. After almost FIVE hours, they are finally done and in their container in the freezer, and OMG are these amazing. I will NEVER make them in a mini pan again, but I will definitely be making them again!

I thought peanuts were legumes and therefor not Keto? Am I wrong?
They are technically Keto because they wouldn’t kick you out of Ketosis. They are on the “free” list for diabetics.
But yes, they are a legume and not Paleo.
