It is finally here!  The Quick and Easy Ketogenic Cooking Cookbook.

I put so much work into this book and to finally have it in my hands feels unreal. If you want one cookbook that is everything keto, this is it!

If you feel overwhelmed with work, life, family, responsibilities and cooking sounds like another job, I wanted to write a letter to you to help you understand that I am a busy working parent just like many of you. There was a time before kids that I didn’t understand the difficulty of finding time to prepare keto meals and when a client would complain that they do not have time to eat healthy, I would think… “it is easy… I do it daily.” I worked all the time and still was able to find time to put a keto meal together. But I can’t judge, cooking isn’t for everyone. I love cooking. There is nothing I adore more than a rainy day cooking in the kitchen with the radio on. I say rainy day because on beautiful sunny days I prefer to be on my kayak or bicycle! I understand we all have different passions and cooking isn’t for everyone, but that is why this cookbook rules! Even the novice cook can make these recipes and if you prefer to be outside like I do, you will love the bonus chapter where you can smoke foods outside!

On November 16th 2010 life threw me for a loop. We received an email that we could pick up our 2 baby boys from Ethiopia. On November 19 we were on the plane and life was never the same. We arrived home in the US the night before Thanksgiving. Let’s just say Thanksgiving was anything but turkey and gravy.

It was the most magnificent yet the most difficult time in my life. I now was responsible for a one year old and a toddler who was scared of everything new and everything was new. I remember them crying the first time they took a bath, scared of the bathtub… think about it. Why is this lady putting me in a huge hole and filling it with water?  They didn’t have a bathtub at the orphanage.

Everything was a new experience to them. Which is why I held Kai in a baby carrier at all times while holding Micah’s hand. Try cooking with one hand. Yep, that’s what I did. But it was important. They never had such a sense of security before and I needed to make up for years of them not having anyone.

I’m not complaining, I would give anything to hold baby Kai in a baby carrier again. But I do want you to know it was an eye opening experience to realize how hard it is to make healthy meals while prioritizing family. But it can be done.  Even with all these challenges, cooking one handed with another strapped to my belly, we did it. Which leads me to why I love this book. Many of the recipes can be made with one hand.

    Dear Maria, I’ve been purchasing your books through Nook and doing Keto since the end of July. In that time, I have not been scrupulous about gram counting, but eat in my safe zone of foods. I’ve lost 30 scale lbs and gone down from a 22 to a very comfortable 18 without trying! For me, the more exciting thing is that with a couple of exceptions, I’ve halved the doses of my medications! And my rough skin patches are much softer and smoother. I sleep better, have clearer thinking, and no cravings for food. I do sometimes want something that is not good for me, but I decide I don’t want to feel the way I used to feel and walk away. Thank you so much for making this clear in your books. The ketogenic lifestyle gives me energy, keeps me full and satisfied without feeling deprived… I used to get headaches many times through the week but with keto, I never get headaches.     I am also a working mom but of two beautiful, busy girls. I love to cook and spend most weekends cooking when not at basketball or soccer games. However, 13 years ago life threw us a curve ball when my youngest was diagnosed with Celiac Disease. Although living a gluten free life now it’s pretty easy, back then it was much more difficult. Six years ago both my oldest daughter and I were diagnosed with it. Although I loved to cook and would cook gluten free meals, I found myself feeling sorry for them and would compensate by making sugary treats.

    I made the switch to Keto about a year ago. What I love about Keto is that almost everything is gluten free. Although my kids are not completely keto, because of the way I have adapted my cooking they are eating so much healthier and are enjoying the food!     Can’t wait to see the new book! I’ve been following a keto diet for the last year and in that time I’ve seen a drastic decrease in my joint inflammation due to rheumatoid arthritis. Not only that but my blood tests went from showing increased inflammation to normal. My doctor is pretty surprised at how well I am managing my disease through diet and the lowest level of medicine after years of much stronger medications like biologic injections and methotrexate.

    On February 4th, 2010, my 49th birthday, I called a cab and asked to be taken to the nearest hospital emergency room. I was having chest pain and severe shortness of breath. At the time I weighed about 240 lbs., was severely deconditioned, and am sure I was suffering from metabolic syndrome. I was admitted that night, and underwent triple cardiac bypass surgery 3 days later. Over the following months, while strictly following my cardiologist’s recommendations to eat a low-fat diet, I put on another 260 lbs. (an all-time high weight for my 5’11” frame). At that time, my wife discovered the truth about grains, carbs, and fats, and shortly thereafter your site. Thankfully, over the ensuing years, I have released 70 pounds, and stabilized at about 190 lbs. (+/- 5 lbs.) for almost two years. Your books and website have been an important part of our learning to live the keto-adapted lifestyle, and we are both feeling healthier than we have for many years.     I am loving keto dieting so far! I eat till I’m full and notice my body doesn’t have the heaviness associated with consuming tons of carbs. I also noticed that when I don’t sleep as much that I’m somehow more productive than on days when I got the same amount of sleep and wasn’t carb conscious. I am learning new recipes. This looks like a great book! Only one week in on my keto lifestyle and I feel like it’s a lifestyle change I can make! I saw your zucchini chips recipe…. Yumm ! I’m going to try and make them soon.

    I found the Keto way of life after I had surgery for PCOS. I was 60 pounds over weight back then. I was embarrassed how my fat rolled over my large scar. How did I get here? How did I let myself go? I found the paleo diet and then Keto. I lost 50 pounds. I still have the last pesky 10 pounds to lose. Getting rid of the birth control pill I was prescribed after PCOS surgery and then going into full blown menopause has made losing the last 10 pounds difficult. Staying low carb has helped me not GAIN the weight I have lost.

    A couple of years ago, after an extreme stress in my life, my health bottomed out. My blood pressure went high along with my glucose. My joints ached constantly and I would wake several times during the night in pain. My hair was falling out while I was starting to grow a heavy fuzz on my face. I was tired and depressed. I had a steady weight gain that no amount of traditional “diet” and exercise would stop. I gained 30-35 lbs in one year and by the end was starving myself and working my butt off. Keto was my miracle. I am an all or nothing type of person so I went in full force. I lost 10 lbs in the first 11 days. I felt great. The joint pain went away immediately. I really felt like a new person. I lost 50 lbs in 3 months and have kept it off for a year. All the health issues that I had developed have went away. I cannot imagine ever going back.     My 19 year old son has had Tourettes since he is about 12, he also has ADD. We homeschooled him up until that time. It took me about a year to find Maria after we began doing an exhaustive search of the internet on any treatments for Tourettes, as the medical community had no answers and offered no hope. After learning that children with epilepsy were sometimes treated with a ketogenic type diet, with success, I found Maria and tried the diet. Since my son’s tics look very much like he is having a seizure, like epilepsy, I thought it couldn’t hurt. The ketogenic lifestyle, and Maria <3 , gave my son his life back!! Within about a year, all of his tics, even the vocal ones, subsided to a point that he and I were both comfortable with him enrolling in our local Christian high school. Do you have ANY idea what it's like for a 14 year old boy to feel normal after thinking he never wanted to be seen in public again? I am so happy to say that my son flew through high school as an honor student and is currently in his first year of college at LSU. I only mention the college because it's a huge, 35000+ university that he would have never had the confidence to attend before.     My husband struggles with Chronic Lyme Disease. When I stumbled among your Ketogenic lifestyle it blew the door open to a new healing approach. Four years ago my husband was literally stuck in bed nearly 24 hours of the day. With help from diet and doctors, he was able to start to get his life back. When I introduced the Ketogenic eating to our family, my husband gained more energy back and was able to come off ALL of his medications. He now lives a Lyme free life and maintains this through Ketogenic living.

    Hi! I am super excited about this cook book! I’ve gone paleo and grain-free, but after my second half marathon I found myself gaining weight. I’ve cut out all “natural” sugars and am trying different options to keep my blood sugar lower. Can’t wait to enjoy food guilt free, knowing that I’m helping to heal my body and gain more health.     This book looks amazing! I struggling with secondary infertility right now and have been trying to decide if going full ketogenic (rather than Paleo low carb) is the answer.     I was introduced to your blog by a high school classmate (Amery, WI) in 2013. It took me nearly 18 months of reading your blog and researching keto diets (I’m a physician so science is important to me) before I took the leap to HIGH fat, low carb eating. I have been Atkins, Paleo, low carb/non-dairy, before and was always hungry and needed to do 7 hours of cardio a week to maintain preferred weight. Since Labor Day 2015, I’ve been eating your way and LOVING it.     The sad truth is I would love to be posting about how a ketogenic diet has helped me but I have looked into it in the past and always felt like there wasn’t enough variety in the foods and just recently found out I am sensitive to dairy eggs and gluten which makes things even harder. I so much want to try to make this diet work for me I would love this cookbook so that it can show me how to incorporate this lifestyle into my daily habits.     How has eating Keto helped me? In so many ways that it almost seemed like a fluke…until I visited my family 2 weeks ago (so much stress!) and ate and drank pretty much EVERYTHING.     I just recently heard your interview on the summit with Cynthia Lamarucciola and your are most inspiring. You made a comment regarding the lines on fingernails indicates carb intolerance. I have been eating very low carb for over a year but still have vertical lines on my nails. Do they ever disappear? Or, am I still having too many carbs? I feel great, sleep well and have no cravings.
