Ingredients
  

  • 1 1/2 pounds ground beef 85% lean
  • 1 medium onion diced
  • 1/2 medium green bell pepper diced
  • 2 cups Primal Kitchen Marinara Sauce Save 20% HERE
  • 3 cups eggplant cut into cubes
  • 1 clove garlic minced
  • 1 tablespoon Fresh parsley leaves
  • Salt and pepper to taste

Instructions
 

  • Peel and cube the eggplant into 1/2 inch squares. Place in a skillet with marinara and garlic. Simmer for 10 minutes or until the eggplant is soft. 
  • Brown the hamburger, onion and green pepper in skillet. Drain off any excess fat. Add remaining ingredients. Cook over medium-low heat, covered, for 20 minutes, stirring occasionally.
  • Divide into 4 bowls. Serve with my PSMF Garlic Bread if desired.
