Preheat your oven to 350 degrees F. In a large bowl, mix all the dry ingredients and then start adding all the wet ingredients to the dry mix. Blend until it is light and fluffy. Grease the Twinkie pan (click HERE to find) (or cupcake pan if you don't have a Twinkie pan). Pour the batter into the pan and fill 3/4 to the top. Bake for 11-12 minutes, or until a toothpick comes out clean. Remove from oven to cool completely. Fill the Twinkie using a decorator tool or a ziplock bag with a hole cut into the corner.
1/4 cup coconut flour, 1/4 teaspoon Redmond Real salt, 1/2 teaspoon baking soda, 3 large eggs, 1/3 cup powdered natural sweetener, 1/2 teaspoon stevia glycerite, 1/5 tablespoon vanilla extract, 1/4 cup butter, 3 tablespoons unsweetened cocoa powder

CREAMY FILLING OPTION 2:
Whip the cream until light and fluffy, add in the sweetener. Use to fill cooled Twinkie.
