In a small food processor, place the eggs. Sift in the gelatin. Then add the coconut milk, collagen, extract, salt, and if using, sweetener.
In a lightly greased medium saucepan, over medium heat, add the egg mixture to the pan and cook until the mixture thickens and small curds form, all the while scraping the bottom of the pan and stirring to keep large curds from forming. (A whisk works well for this task.) This will take about 4 minutes. Optional: place the mixture into a food processor and pulse until you get small pieces of “rice”. Transfer the mixture to a serving bowl.
Pour unsweetened coconut milk over the mixture just before serving. Best served warm. Top with cinnamon and blueberries if desired.
