To make the Protein Sparing pancakes, separate the eggs (save the yolks for a different recipe). Place the whites in a clean, dry, cool bowl. Add the gelatin and salt and whip on high for a few minutes until VERY stiff.
Gently fold in the Further Food collagen, and extract.
Heat a non-stick pan (I used THIS Scan Pan)to medium high heat. Spray with avocado oil spray and place a circle of dough on the pan. Fry until golden brown, about 1 minute. Flip and cook another minute or until golden. Remove from heat and place on a plate.
Sprinkle the protein sparing pancakes with cinnamon and Swerve confectioners or keto pancake syrup if desired. Enjoy! .
