Protein Noodle Lasagna

Ingredients
  

  • 1 pound Italian Sausage (or ground beef)
  • 3/4 pound 95% lean ground beef
  • 1 cup onion diced
  • 1 tablespoon butter (or avocado oil)
  • 2 cloves garlic chopped fine
  • 4 cups Primal Kitchen Marinara Sauce (or other sugar free marinara sauce)
  • 16 ounces ricotta cheese (or cottage cheese)
  • 1 large egg
  • 1 teaspoon Redmond Real salt
  • 12 ounces mozzarella cheese in slices
  • 3/4 cup parmesan cheese freshly grated
  • 8 ounces thinly sliced deli turkey or chicken

Instructions
 

  • Preheat oven to 425 degrees.
  • In a Dutch oven, place the onion and butter and saute over medium high heat for 5 minutes or until onions are softened. Add the garlic and cook another minute. Add the sausage, ground beef and saute until browned and no longer pink. Season with 1/2 teaspoon salt. Stir in marinara sauce. Taste and adjust seasoning to your liking.
  • In a mixing bowl, combine ricotta cheese with egg, and 1/2 tsp salt. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish.
  • Arrange chicken breast slices over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray or make sure the foil does not touch the cheese. Bake for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
