Crockpot Mashed "Faux"tatoes

Ingredients
  

  • 2 cups water salted (or beef, chicken or vegetable broth)
  • 1 head cauliflower trimmed, cored, cut into florets
  • 2 medium turnips peeled and chopped
  • 1 slice lemon optional
  • 1/4 cup beef broth (or chicken or vegetable broth)
  • 1 tablespoon chopped fresh chives
  • Redmond Real salt to taste
  • fresh ground pepper to taste
  • 1 tablespoon butter or butter flavored coconut oil for dairy free

OPTIONAL ADDITION:

  • 2-4 tablespoons cream cheese for extra yum factor (omit if dairy free)

Instructions
 

  • Place the water or broth into a 6 quart crockpot. Add the cauliflower and turnips as they’re prepped, then the lemon. Cover and cook on medium heat for 6-8 hours or until soft. Drain and transfer to a blender or food processor and puree until very smooth. Add broth, chives, seasoning and butter if desired. Serve and enjoy!
