Smoked Cauliflower Steaks

Ingredients
  

  • 1 head cauliflower sliced into steaks
  • 1 tablespoon MCT oil or avocado oil
  • 1 teaspoon Redmond Real salt
  • 1/2 teaspoon fresh ground pepper

OPTIONAL ADDITIONS:

  • diced tomatoes
  • dairy free Avocado Ranch Dressing

Instructions
 

  • Soak wood chips in enough water to cover for 1 hour. Drain.
  • When ready to smoke, start the smoker with the lid open until the fire is established (4 to 5 minutes). Set the temperature on 180 degrees F and preheat with the smoker closed, about 10 to 15 minutes.
  • Cut the cauliflower into 1 inch thick steaks. Rub with MCT oil and sprinkle with salt and pepper. Place on tinfoil (to prevent pieces dropping and falling into the smoker) and poke holes in the tinfoil for smoke to infuse the cauliflower. Place tinfoil on the grill grate and smoke for 1 hour. After 1 hour remove the cauliflower and serve with diced tomatoes and dressing if desired.
