Ingredients
  

  • 1 1/4 cups low fat cottage cheese
  • 5 large eggs
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon Redmond Real salt

PIZZA HUT SPICE MIX:

  • 4 tablespoons parmesan cheese freshly grated
  • 3 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano

Instructions
 

  • Preheat oven to 400 degrees F. Grease a square baking dish or line a muffin pan with paper baking cups or spray with avocado oil spray.
  • In a food processor, mix the cottage cheese, coconut flour, baking powder, eggs, salt, and 1/2 of the Pizza Hut seasoning until very smooth.
  • Spoon the mixture into the muffin cups 3/4 full, or spread into a baking dish, then scatter with the remaining spice mix. Bake for 30-35 minutes, or until set, risen, and golden brown. Serve hot or at room temperature.
