Place the brewed chai tea in a large heat-safe bowl. Sift in the gelatin while whisking so no clumps form. Once the gelatin is dissolved, add the coconut milk and vanilla bean seeds and stir to mix.
Add the allulose, stevia, cinnamon, and salt. Add collagen if using. Stir well. Taste to adjust sweetness to your liking.
Pour the mixture into cute cups for serving. Refrigerate until set, about 2 hours.
