Deviled Eggs

Ingredients
  

  • 12 large eggs
  • 1/2 cup guacamole OR my homemade baconnaise or homemade mayonnaise
  • 4 slices bacon
  • 2 tablespoons shredded Cheddar cheese omit if dairy sensitive
  • 1 tablespoon Primal Kitchen Dijon mustard
  • Redmond Real salt to taste
  • smoked paprika optional

Instructions
 

  • Place eggs in a saucepan and cover with cold water.
  • Bring water to a boil and immediately remove the pan from the heat.
  • Cover and let eggs cook in hot water for 11 minutes.
  • Remove from hot water and rinse with very cold water.
  • While the eggs are cooking, make the bacon.
  • Place the bacon in a large, deep skillet.
  • Cook over medium-high heat until evenly brown.
  • Crumble into very small pieces and set aside.
  • Peel the boiled eggs and cut lengthwise in half.
  • Remove yolks and place into a small bowl.
  • Mash egg yolks with guacamole, /mayonnaise, crumbled bacon and cheese.
  • Stir in mustard.
  • Season with salt.
  • Fill egg white halves with the yolk mixture.
  • Sprinkle with smoked paprika.
  • Refrigerate until serving.
