Place all of the ingredients in a mini food processor or blender and combine until very smooth.
Spray a skillet with tallow spray and heat over medium high heat. Once hot, pour the batter into the skillet to make 3 inch pancakes (you will get about 8 small pancakes). Cook until golden brown, about 2 minutes, then flip and cook until done, another 1 to 2 minutes. Remove from the skillet and repeat with additional cooking spray and batter.
Dip the pancakes in a runny egg or whatever your heart desires! I love to make breakfast sandwiches with 2 pancakes, sausage and an egg (like a McMuffin)!
