Place the eggs into a medium bowl and beat with a hand mixer until well combined.
In another bowl, stir together the Equip, gelatin, and salt. There might be lumps but that is ok.
With the hand mixer on slowly pour in your dry ingredients into the egg mixture. Keep mixing for about one minute until batter thickens. Add the stevia glycerite if using.
Spray the waffle iron with tallow spray and place ¼ cup of batter into the center of your waffle iron. Cook for about 4 to 5 minutes until golden brown and crispy. Do not underbake or it will shrink. Repeat with remaining batter.
Drizzle with hollandaise, butter or top with over easy eggs.
