Cucumber Salad

Ingredients
  

  • 2 large cucumbers
  • 1/4 cup small red onion sliced thin
  • 1 1/2 TBS Redmond Real salt
  • 1 cup coconut vinegar
  • 1/2 cup water
  • 1/4 cup Natural Sweetener or a drop of stevia glycerite
  • 2 TBS fresh dill or 2 tsp dried
  • OPTIONAL:
  • 2 tsp fresh ginger grated fine

Instructions
 

  • Slice the cucumber and onion wafer-thin.
  • In a colander, toss the cucumber and onion with the salt and let it sit and drain for 20 minutes.
  • Press the liquid out of the vegetables and rinse well with cold water.
  • In a medium bowl combine the vinegar, water and natural sweetener and stir well.
  • Add the cucumber mixture and toss to coat.
  • Stir in the dill and ginger if desired.
