Ingredients
  

  • WHITE CHOCOLATE:
  • 2 oz cocoa butter
  • 1/3 cup Natural Sweetener
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1/8 tsp Redmond Real salt
  • MILK CHOCOLATE:
  • Add 1/4 oz unsweetened baking chocolate
  • DARK CHOCOLATE:
  • Add 1/2 to 1 oz unsweetened baking chocolate depending on how dark you like it
  • FILLING:
  • 1/2 cup Natural Sweetener or erythritol and 1 tsp stevia glycerite
  • 1/4 cup coconut milk
  • 2 large eggs
  • 4 TBS butter or coconut oil
  • 1 tsp vanilla extract

Instructions
 

  • Place cocoa butter in a double boiler and heat on medium high until fully melted (or <g class="gr_ gr_145 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling ins-del multiReplace" id="145" data-gr-id="145">microwave safe</g> bowl and heat on high for one minute, check and heat for 30 seconds until melted). Melting cocoa butter takes longer than traditional fats.
  • Stir in natural sweetener.
  • Stir in extracts and salt (and baking chocolate if making milk or dark chocolate).
  • Place into truffle mold and cool in <g class="gr_ gr_150 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar only-ins replaceWithoutSep" id="150" data-gr-id="150">refrigerator</g> until white chocolate is solid, about an hour. Or the speedy method; you can place the molds in a freezer <g class="gr_ gr_151 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar multiReplace" id="151" data-gr-id="151">till</g> they are set up, which will only take a couple of minutes versus <g class="gr_ gr_140 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling ins-del" id="140" data-gr-id="140">and</g> hour.
  • FILLING: Combine natural sweetener, coconut milk <g class="gr_ gr_171 gr-alert gr_gramm gr_inline_cards gr_run_anim Punctuation only-ins replaceWithoutSep" id="171" data-gr-id="171">and</g> 2 eggs in heavy medium saucepan and whisk to blend; add coconut oil or butter. Whisk constantly over medium heat until mixture thickens and coats back of <g class="gr_ gr_168 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar only-ins doubleReplace replaceWithoutSep" id="168" data-gr-id="168">spoon</g> thickly (do not boil), about 12 minutes. Stir in the extract. Place bowl in larger bowl filled with ice water and whisk occasionally until filling is cooled <g class="gr_ gr_170 gr-alert gr_gramm gr_inline_cards gr_run_anim Punctuation only-del replaceWithoutSep" id="170" data-gr-id="170">completely,</g> about 15 minutes. Can be made 1 day ahead.
  • TO MAKE TRUFFLE: Remove the mold from the fridge or freezer and fill with filling.
  • Then top off the filling with a layer of the cocoa butter mix so that the filling is inside and surrounded by the "white chocolate". Place back into fridge/freezer to set.
