Ingredients
  

TWINKIES:

  • 1 1/2 cups blanched almond flour (or 1/2 cup coconut flour)
  • 1/4 teaspoon Redmond Real Salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons butter (or coconut oil), softened
  • 1/3 cup powdered natural sweetener (erythritol), plus 1 tsp. stevia glycerite
  • 3 large eggs (6 eggs plus 1/4 cup unsweetened macadamia nut milk if using coconut flour)
  • 1 teaspoon rum extract

MASCARPONE CREAM:

  • 4 ounces mascarpone cheese (or cream cheese, or Kite Hill dairy free cream cheese), softened
  • 4 tablespoons decaf espresso
  • 3 tablespoons powdered natural sweetener (erythritol, or a few drops of stevia glycerite to taste)
  • 1/4 teaspoon rum extract

  • To make the twinkes: In a mixing bowl combine almond flour, baking soda, and salt. Mix butter, sweetener, eggs and rum extract until smooth. Stir wet ingredients into dry. Grease Twinkie pan. Spoon batter into the pan. Bake at 325° for 30-40 minutes. Allow to cool completely.
  • Make the mascarpone cream: Mix ingredients together until smooth (it will thicken as it sits). Squirt into Twinkies with injector tool.
  • Dust Twinkies with unsweetened cocoa powder and a shaved The Good Chocolate Bar, if desired. Dip into a cup of espresso for an extra delicious treat!
