Preheat the oven to 325 degrees F. In a medium bowl, stir together all the ingredients for the cookies.
Using a hand mixer or your fingers until the butter lumps are smaller than peas. Form a stiff dough. Roll into 1/4 inch balls. On a cookie sheet, place 1/4 inch balls 2 inches apart.
Flatten balls into circles (or in the shape of peanuts to look like actual Nutter Butters). Bake for 10-12 minutes until edges are lightly browned. NOTE: DO NOT REMOVE THE COOKIES FROM THE BAKING SHEET UNTIL COMPLETELY COOL.
FILLING: In a medium bowl, mix together all the ingredients and taste to adjust sweetness to your liking. Place a tablespoon onto the inside of one protein nutter butter and place another cookie on top.
