The BEST Keto Eggnog

Ingredients
  

  • 1/2 cup heavy cream (or coconut milk if dairy free)
  • 3/4 cup unsweetened macadamia nut milk (or low fat coconut milk)
  • 2 large eggs
  • 1 scoop Vanilla Equip Protein Powder
  • 1/2 teaspoon ground nutmeg
  • 3/4 teaspoon stevia glycerite (or a few drops of monk fruit)
  • 1/2 teaspoon rum extract

Instructions
 

  • Heat the heavy cream and almond milk in a sauce pot over high heat until it comes to a soft boil.
  • Meanwhile place the eggs, Equip, nutmeg, stevia and extract into a blender. Puree the mixture and while the blender is running over slow speed, pour the hot cream mixture into the blender. Taste and adjust sweetness to your liking. Place in the fridge to chill (the eggnog will thicken as it chills).
