In a large bowl place the cubed chicken, cream cheese, sour cream, buffalo sauce, cheddar cheese, and Ranch seasoning. Stir until well combined. Taste and adjust seasoning to your liking.
Transfer the dip to an 8 inch cast iron skillet. Top with the shredded mozzarella.
Place on the smoker and smoke for 1 hour.
Remove the dip from the smoker and top with sliced green onions. Serve with Carnivore Crisps!
