5 Minute Garlic Butter Fried Frog Legs

Ingredients
  

  • 32 ounces frog legs
  • tallow for deep frying (I love THIS brand)
  • 4 tablespoons salted butter
  • 2 cloves roasted garlic minced (or garlic confit)

OPTIONAL:

  • 4 tablespoons Fresh parsley leaves for garnish

Instructions
 

  • Heat a large dutch oven 2 inches deep with beef tallow over medium high heat to 350 degrees.
  • Rinse and pat dry fresh frog legs with a paper towel. Carefully add the frog legs one at a time to the tallow. Fry for 5 minutes until cooked through and golden. Remove frog legs from the tallow and let rest on a plate lined with paper towels.
  • Into a medium skillet add 4 tablespoons salted butter, 2 cloves of minced garlic (roasted or confit) and cook over medium heat until the butter is melted and the garlic is fragrant. Toss in fresh parsley if you're feeling French ;)
  • Place the frog legs into a shallow bowl. Season with salt. Cover in garlic butter. Best served fresh.
