  • 4 pounds boneless chicken thighs cut into 1 inch cubes (or lamb, or beef, or a combination)


  • 1/4 cup lemon juice or lime juice
  • 1/4 cup Primal Kitchen Avocado oil or MCT oil
  • 2 tablespoons onion grated
  • 1 teaspoon chili powder
  • 1 tablespoon fresh ginger grated
  • 1 clove garlic minced
  • 2 teaspoons Redmond Real salt


  • Cut the meat into 1 inch cubes.
  • Place all the marinade ingredients in a shallow bowl. Add chicken, beef or lamb cubes. Cover and marinade overnight.
  • Preheat grill. Once hot remove meat from marinade and place onto soaked skewers. Place on hot part of grill and cook for 3 minutes, flip and continue to cook until meat is cooked to your liking (and chicken is no longer pink).
