Life may seem easy and smooth sailing for me but believe me, we still have very difficult times. One of the reasons I really wanted to write Keto Instant Pot Recipes cookbook is because I know that we all have trials and tribulations throughout our life that can be extremely difficult to deal with and those are the times we are often thrown off course! When I wrote Keto Instant Pot, I was juggling more than ever. With Craig’s illness, I had to take on more jobs. That is why the instant pot became my best friend!

I started doing all the things that Craig did and could no longer do which meant my multitasking went into overdrive and I felt like I had one too many balls in the air while juggling and I was about to drop one at any time. Or one of my favorite movies, Lord of the Rings, Bilbo Baggins “I feel like butter scraped over too much bread” (keto bread that is!). Eating keto was the only thing that helped his inflammation go down so making healthy meals for him was a priority. While keeping up on the growing number of phone consults, creating a keto course to help educate others and creating a Keto College course to teach others to become a Keto Coach, I still made time to make healthy and delicious keto meals and it was my Instant Pot and slow cooker that helped me accomplish this.

Eating keto isn’t a diet for me. It is a lifestyle. I love food and I will always love food, but more so, I love the way I feel eating like this! That is why I spend so much time and money creating new recipes for all of you. I want you to be able to commit 100 percent.

    I just received your Instant Pot cookbook YAY!!!!!!! and I notice MCT oil in the book, but during your very recent live Q&A from Hawaii, I think it was a viewer who asked you about MCT oil, and if I understood correctly you responded you hadn’t purchased in ten years?

    Just looking for your latest view on MCT oil – keep it in the pantry, or avoid it?

      Yes, you can use olive oil, avocado oil or for frying lard or tallow. 🙂

        Maria which olive oil do you recommend? I recently read something saying not to buy extra virgin but rather regular olive oil. What is your knowledge on this?

    Have been doing Keto by your advice for several months and have successfully lost over 38 lbs and feel wonderful! I do have one issue that is starting to worry me. My hair has been falling out by the handfulls and and I can’t seem to get it to stop. My Dr, who is a big keto supporter, did blood work and says everything looks ok. I think my diet is pretty balanced with a goal of 21 Carbs, 132 g fat, and 106 g protein about 1700 calories per day. What do I need to change or correct…can you send suggestions? I am drinking collagen shakes and taking 10,000 mcg of Biotin…any suggestions?

      Adding collagen and biotin are good. And getting enough protein which it looks like you are. Then Add 1000mg l-tyrosine twice daily on empty stomach: https://amzn.to/2xcpsJs

      Hair shedding can happen with any major change of diet. It stops in a couple months and grows back. 🙂

    Hi, Maria. I own the Breville Fast Slow Pro BPR700, not an Instant Pot. I would like to be able to make ketogenic diet-compliant versions of traditional cake in this wonderful, electronic pressure cooker (which has a dessert function). However, there are only a few specific recipes and limited, general instructions for how to make baked goods in this machine — and, so far, I’ve found no basic, traditional cake recipes (let alone ketogenic versions). Do you have any experience using this machine for traditional, normal-sized cake baking? And if so, do you have any information you could pass along? It would be greatly appreciated.
