Ingredients
  • 1 cup full-fat coconut milk
  • ¼ cup fresh lime juice (about 2 limes)
  • ¼ cup Swerve confectioners’- style sweetener or equivalent amount of liquid or powdered sweetener
  • Few drops of coconut stevia
  • 1 teaspoon pineapple extract (or a few drops of pineapple oil)
  • ½ teaspoon rum extract
  • 2 cups crushed ice
  • 1 cup sliced strawberries
Instructions
  1. Place the coconut milk, lime juice, sweetener, coconut stevia, pineapple extracts, rum extract, and ice in a blender and puree until smooth. Taste and adjust sweetness to your liking. Divide ½ the mixture into 4 glasses.
  2. Add the sliced strawberries to the rest of the mixture in the blender and puree until smooth. Divide the mixture into the glasses on top of the coconut mixture. Serve and enjoy!
  3. Best served fresh, but extras can be stored in an airtight container in the freezer for up to 1 month. Thaw for a few minutes before serving.
