I made these simple minute muffins for a fast and tasty breakfast and my boys kept asking for more!

All you have to do is place the packet ingredients in a medium bowl, add an egg and some unsweetened almond milk (or other liquid), stir and then place into a cute cup to microwave for about 90 seconds. Tada! Breakfast in an instant!

Testimony of the Day

“In October 2102 I started on the path to having gastric bypass surgery after years of yo-yo dieting and being overweight since around age 8-9. I did everything from doctor supervised to phen-fen to WW to Medifast. My best weight loss was from Medifast but it quickly became too expensive and really was icky to drink shakes all day! 

In January 2013 I read a Wheat Belly synopsis. This was an interesting concept to me so I bought the Wheat Belly Cookbook on Kindle. At the end of his book, Dr. Davis offered Maria’s Blog as a great place for recipes, guidance, etc. I checked it out and was impressed so I bought the Metabolism book for my kindle. Then I had an initial health assessment and email consult with Maria. I immediately stopped my diet coke addiction (over 40 oz a day) – that was the hardest one for me. During this time we started eating less wheat and sugar and by January 15th I got rid of all the grain products and went wheat free.  
 
Since that consult with Maria in early January through today I’ve lost 51 lbs. The first 40 came of rather quickly and the last 11 have been slower, but are still coming off at about 1 to 1.5 lbs a week. All this with little exercise (since I’m allergic to it! Ha, Ha, Ha!) I canceled my WLS that was scheduled for April 2013 and couldn’t be happier. My moods are improved, I’m sleeping great, my body doesn’t ache all the time, my hands and feet aren’t always cold, I’ve not had a headache or acid reflux since late January, and my PMS is much better. I was experiencing facial ticks and vertigo type symptoms daily and the doctor didn’t know why but within 10 days of getting off the Diet Coke, they were gone and haven’t been back. 
 
I still have a long way to go (another 75 lbs maybe) but am now confident I have the right knowledge and the right nutritionist (Maria) to help guide me. Maria’s books, blog posts, and facebook page are great and full of eye-opening insights. We like most of her recipes I’ve made – especially the treats! I would love to be able to afford one-on-one consults but our budget only allowed for the basic health assessment and email consult. Of all the things I’ve done to shed the pounds, paying Maria (including books, cookbooks, and one seminar) was the best money I’ve ever spent.     I never knew I had a gluten or wheat intolerance until I had been doing LCSF for awhile. Backsliding is my downfall. I swear its like a drug, one taste and I must have more and before I know it, I’m eyeball deep in gluten and wheat foods again. The most eye opening revelation is that now i know I’m intolerant because only when I’m eating that crap do my ankles swell. I must have some allergic reaction to it. As long as I’m LSCF (and gluten free, which goes along with LC) are my ankles skinny!!

    I began Wheat Belly in mid Jan. of this year. I’m so encouraged by the results as everything before it, that I’d tried had NOT worked. I was obese (hate that word), insulin resistant and my health wasn’t good. I had type 2 diabetes and a recent diagnosis of rheumatory inflammatory disease and fibromyalgia. No matter how I tried the weight would not come off. To date I’ve lost 40 lbs. (more or less—I only weigh once a month so don’t know for sure where I am at this moment). It’s coming off slowly but it’s coming off. My fasting labs showed my A1c had come down to within normal range (important for diabetes) as well as my cholesterol. I no long have IBS as well. I’d LOVE to be able to try more of these weight free market products…I’ve already made a purchase with them and they were good. Being wheat free has made such a HUGE difference in my life.     My son was diagnosed as having “pretty severe” ADHD nearly two years ago. It was suggested to us that he adopt a gluten free/casein free lifestyle along with avoiding food dyes. There have been times along the way that he has had something containing gluten or casein and we can tell the difference immediately. He is good about it now and knows what he can and cannot have. It has made a positive difference in his behavior but it is still a daily battle. I told him that I would do this with him. We hold each other accountable. It was tough at first but I really enjoy it now! I’ve worked out for years but after going wheat free I shed fat and just feel better in general.

    I have been on a journey to get my entire family of 6 (7, including my step-son’s mom) to be wheat and eventually grain-free for the past 2 years. It has been tough, because of trying to carry on the lifestyle in 2 different homes and being the main cook and educator. The benefits have been very positive, though. Personally, I have maintained a healthier body-structure, my skin has cleared up, I get much better sleep than ever before, and my digestion is more regular than it ever was when I consumed wheat on a regular basis. Now, when I slip-up and consume something that contains wheat, I feel the sugar-rush and get acne within 3 days later – that’s just crazy! Anyways, being wheat and gluten free has helped my children, my step-children, and my husband significantly, as well. My husband and oldest step-son suffered from severe year-round allergies for his whole life (37 years) and lived on Benadryl until I changed our diets to exclude gluten and wheat. Now, neither of them have needed allergy medications for almost 2 years! Overall, this has been a wonderful success!

    I have suffered with digestive issues for years. In fact, at just 19 years of age, my colon paralyzed and had to be removed. I then suffered from three heart attacks due to congenital birth defects and side effects from medication. With small children, I found myself at a loss for how to improve my health. Over the years, I had to be on bed-rest often and gained more than 80 lbs. We started eating badly and my belly was always upset. I had to drink tea every night to avoid pain and bloating.

    When I found out about the Wheat Belly book, my family, including my 20, 16 and 10-year-old children, supported the change completely. We went through our cupboards, found the products that contained wheat and high fructose corn syrup and immediately got them out of the house. We cut back on cable and other expenses in order to have more money to experiment with healthier options. I have so much energy that I, along with my youngest, drove 10 hours (each way) to surprise my grandmother over Thanksgiving just to bring her a little extra cheer. I hit the gym every day, I do yoga and meditate every night using the Insight Timer app on my phone.

    Eliminating wheat has turned into an entire lifestyle change and we are all noticing. My kids have less acne and, when we are full, we feel satisfied instead of sick. This has given us our family life back!

    My family and I have been wheat free for 3 months now. I have lost 15 lbs, my husband has lost 20 lbs. We both feel better than we have in years.. my 10 year old daughter has even lost weight and she told me the other day, “Mom, I can run better now ! ” That is priceless because she has asthma and I believe the cutting the wheat has made a difference in how much better she can breathe to run. Also, this past summer, my husband was diagnosed with a kidney disease that one of the causes is inflammation. We did research and decided that trying a wheat free diet could help elimination/reduce that inflammation and thus far, it is working because it is in remission, hopefully to never return.

    Hi There…. I suffer from acid reflux and have a hernia which make eating a pain.. literally! I am just starting on the wheat free path and already find a difference with my bowl function and I am off my reflux meds Nexium which causes bone loss which was a big worry of mine. I am just learning how to change my diet with basic recipes and hope to expand on that so it is easy and automatic.     Have been SF for years, trying to help my diabetes…it’s not really working well enough to achieve what I want to accomplish, so I’ve been LC for 4 mos now, feeling even better but have found a great interest in GF and want to see if WB will help get all aspects under control finally!!! I find it amazing that more “physicians” don’t encourage this lifestyle for their patients!!     I went off of wheat and sugar about a year ago. I was pre diabetic, almost losing my leg. I was lethargic most of the time. 100 lbs. lighter, I am a new person. Exercise and the right foods are my lifestyle now. Besides, I can’t eat wheat because of the pain it causes me the next day, intolerable. I don’t miss wheat one bit and I will never go back. Now sugar and I will go a couple rounds once in awhile, but nothing major that I can’t handle.

    A friend just told me about your blog. Looking forward to reading more about you. In March 2012, my physician suggested I read Wheat Belly and watch a movie called “Fathead”. After doing both of those things, I decided to cut out the wheat and cut back on my carbohydrate intake. With getting rid of the wheat went most processed food. I then cut out HFCS, artificial sweeteners, cut back on sugar, and cut out all the bad cooking oils (at home, eating out is another story). I have lost over 55 lbs (40 lbs from just changing my diet and an additional 15 with exercise (burst training)). I have never felt better in my 43 years and it just keeps getting better and better.

    I have been wheat free for approximately 2 and a half months I am down approx 30 lbs with about 30 more to go.. I am losing slowly as I do little exercise. I am feeling amazing but most of all this is not a diet for me its a life altering change. I have lived on nexium for almost 10 years and while I still use it occasionally (if I eat later than usual) I find the majority of my stomach issues have disappeared. My joint pain is less frequent and my headaches are fewer. I have cut out pop 99% which is a great improvement for me.
    My problem is sugar, I still put sugar in my tea which I love.. Iwon’t switch to sweetners of any kind as I just got off that stuff and I don’t like honey in my tea. ANY suggestions .. looking for friends in my search for health and happiness

    Since going grain free, just recently I have experienced a lot of changes. I am starting to see my indigestion finally clear after a long battle of sleepless nights and hurtful days. Now that I am grain free I am seeing other negative effects leave like aches and pains, headaches, longer periods, etc. I am still working on not falling off the wagon but each day gets easier.

    The absolute BEST thing that has happened to me since going wheat free is that my blood sugar is close to the ‘normal’ range. I’ve been on meds for diabetes for the last 15 years, but now control my blood sugar thru diet and I don’t have to worry about all the side affects of the meds, which is some cases is worse than the disease itself.

    Would love to win the Wheat-Free market stuff! We are traveling this weekend, and I was just thinking what am I gonna do?!?! So my game plan was to make some snack stuff to bring with me. I have not been doing this lifestyle very long, but I have to say, my tummy has gone down. The other thing is that I have lost 4 pounds….maybe more….for only about 4 weeks. I will say that during this time I have had some slip ups. But I feel better. One thing I have noticed (cuz I slipped up last night) was that this morning my hands fell asleep again while I was sleeping. This used to be a chronic problem I had where my hands would fall asleep very easily. I didn’t even notice that it was gone until I ate some stuff yesterday that I shouldn’t have and wowzers…hands asleep this morning. Back on track today and like I said planning my trip so I stay on program. 🙂

    Since discovering Maria, this blog, and all the wonderful recipes I have lost weight, feel that my mood is much more stable and I have more energy. I have slowly acquired the majority of ingredients that many of Maria’s recipes call for and am excited to be home this weekend trying some out. I’m going to make Maria’s graham cracker recipe, add some cocoa and use it for the crust on a wheat and sugar-free sea salt caramel chocolate tart that I’m hoping will turn out great as I’d like to take it to a holiday party.     Going wheat/grain free and dairy free as well (dairy allergy) -(paleo) has be one of the best decisions I’ve made. My energy leveles have increased, I hardly ever get sick, and I feel all around very healthy. I have never been an unhealthy person so this change was not a difficult one for me.     I just want to thank you Maria for your wonderful cookbooks/recipes. I’ve purchased 3 of your cookbooks, & I share your recipes & Blog via Pinterest & Instagram. I absolutely love your wonderful ideas of how to make healthy wheatfree baked goods. I feel the very best I’ve ever felt when I follow the keto lifestyle. I have CFS & Fibromyalgia, & I find that my energy levels, & lowest pain levels are when I am faithfully following the type of lifestyle/diet you promote. Bravo for your talent & ingenuity in creating the wonderful recipes that you share. I have made your cookies, breads/buns, & cinnamon rolls many times & shared with friends & family who are impressed at what can be created without the use of the wheat products they are use to baking with. My mother has metastatic cancer & has been fighting it with chemicals & radiation, & surgeries that have taken their toll on her overall health. Her latest surgery wound won’t even heal all the way. I am going to visit in a couple of weeks & feed her a keto diet while I am there, & try to get her to understand that she could live a much better quality of the remainder of her life if she will try & eat this type of diet. She’s of Asian descent & has a very difficult time living without her rice. But I will continue to try & get her to see the benefits of avoiding the “poison” it is to her body while it is full of cancer cells! Thank you for educating people on the health benefits of avoiding wheat & unhealthy carbs!!

    My life changed completely once I became grain and sugar free. There were so many significant changes, I had to keep track of them in a file, the link for which is below. I had startling improvements in many problem areas. Here are a few: joint pain, weight loss, headaches, regularity, allergies, energy, sleep, heartburn, brain fog, blood pressure, dental health, and resistance to heat and cold. In the summer of 2011, I was 64 going on 84. Now I am 66 going on 36. Life is good.
