I can officially say that hubby is completely on board with our new way of eating.  Tomorrow is 2 months of success for us.  I have lost 17 pounds and have greatly decreased meds I was taking.   DH has lost 30 pounds and no longer gets up in the middle of the night for toast and peanut butter.  Weekend afternoon naps are at a minimum also.

Hubby was a great Maria’s Way cheerleader today at work.  A coworker has been eating cheetos every morning recently.  They got to talking about it and the reason the guy was eating the cheetos.   Well, his doctor told him he was almost a diabetic and to prevent progression to full diabetes he needed to eat more carbs.  Yes Maria, DH got your soapbox out and provided our personal testimonies.  He told the guy how I eat less than 20gms carbs daily and that my insulin use was down more than half now.

I have my ex and his wife very interested in the Maria way too.   Ex has diabetes and epilepsy,  so only good can come of him changing his eating.” Martha

Human Growth Hormone

If you have read any of Suzanne Somers’ books, you already have read about the amazing properties of human growth hormone. She is a huge advocate increasing this hormone and injects it into her body every night. I also believe that we need to increase this awesome hormone, but unlike Susan, I have tips and tricks on how to boost it through diet and exercise; which come with no scary side effects.Human growth hormone, also known as hGH, is an amazing hormone that is produced by the pituitary gland in the brain. This hormone stimulates cell production and is responsible for increasing height, building muscle mass, keeping bones healthy, controlling sugar and insulin levels, absorption of calcium, reducing fat as well as helping numerous other functions that are fundamental for growth.The human growth hormone is produced at full-speed when we are young but the pituitary gland slows down the production as the body ages; usually around age 30 it really starts to decline. The level of hGH peaks during puberty when there is a growth spurt. The levels continue to decline throughout our adult life. This decrease in the levels of HGH is what causes elasticity in our skin, wrinkles, increase issues with diabetes, depression, loss of energy, and loss of muscle mass. Increasing the levels of human growth hormone can make you look young and feel healthy.

These were really tasty. I’ve never had a real scotch egg, but we liked these!

8 eggs

1 lb ground lamb or pork sausage
1/3 tsp Celtic sea salt
1/2 cup fresh thyme, or sage, finely ground (or other spice)
1 tsp onion powder
1/4 cup coconut oil or butter

Preheat oven to 350 degrees F. Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, immediately rinse with cold water, cool and peel.

Mix the salt into the ground sausage. Flatten the sausage and make a patty to surround each egg. Roll the sausage-coated egg in spices to cover evenly. In a deep skillet, heat coconut oil to 375 degrees F. Fry in the hot oil until herbs are crispy on all sides. Place on a cookie sheet and bake in the preheated oven 10 minutes. Serve with Protein Bread for a Pure Protein and Fat meal!
Nutritional Comparison:
“Traditional Scotch Egg” = 300 calories, 16 carbs, 0 fiber
“Healthified” Scotch Egg = 250 calories, 0.5g carbs

  • I don’t want to creep you out with how much Tracey and I love you, but it’s things like this that BLOW MY MIND.

    I’ve always wanted but never had a scotch egg, and it looks like I’m going to be forcing Tracey to make these for me next time I visit her in Ohio.

  • I noticed a big change from this recipe to the one that appears in the Low Carbing Among Friends cookbook. I was wondering if the 1/4 c, coconut oil called for in the book (pg 89) is the actual amount used for frying the scotch eggs? I love scotch eggs and really want to try but not sure which recipe to go with. Aldo, i have never used cocunut oil before. What form does it actually come in? Is it a solid like shortening that you melt then measure. Thanks for your help. I have really like all of your recipes that I have made.

    I tried this last night for dinner. This was SO GOOD, and super easy! It took a little longer for the sausage on my eggs to get done in the oven, about 20 minutes. I also made a mustard sauce using almond meal, butter, heavy cream, the leftover seasonings from the eggs, and mustard. The eggs were fabulous on a bed of organic spinach, topped with the sauce. My father stated he would prefer Ketchup instead of mustard (may make the sauce in the future useing low carb, no HFCS ketchup in place of the mustard), but it was a classy meal of ‘Sausage and Eggs’. Definitely a keeper Maria! Thank you!
