Ingredients
  

  • COOKIES:
  • 1 cup coconut oil or butter
  • 1 cup Natural Sweetener
  • 1 egg
  • 1 1/2 cup blanched almond flour
  • 1/2 cup coconut flour
  • 1 tsp aluminum free baking powder
  • 1 tsp Redmond Real Salt
  • NUTELLA:
  • 2 cups raw hazelnuts
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup Natural Sweetener or equivalent
  • 1/2 tsp vanilla or hazelnut extract
  • 1/8 tsp Redmond Real Salt
  • 3 TBS hazelnut oil could use other oil like macadamia nut

Instructions
 

  • Preheat the oven to 325 degrees F.
  • In a medium bowl, cream the butter, natural sweeteners and egg. Cream for a few minutes until very fluffy.
  • In a separate bowl mix together the almond flour, coconut flour, baking powder, and salt.
  • Slowly add in the dry ingredients to the wet and mix until smooth.
  • Roll 2 TBS of dough into a ball in your hands (for uniform shape) onto a cookie sheet, then press down to they are about ¾ of an inch thick. Place cookies about 2 inches apart.
  • Bake in preheated oven for 17-20 minutes or until golden around the edges.
  • Cool completely on the baking sheet before removing and enjoy!
  • I keep mine in the freezer (for portion control!:)
  • To Make the Nutella: Heat the oven to 400 degrees. Spread the hazelnuts evenly over a cookie sheet and roast until they darken and become aromatic, about 10 minutes. Transfer the hazelnuts to a damp towel and rub to remove the skins.
  • If you use erythritol, grind in a coffee grinder until a smooth powder.
  • In a food processor, grind the hazelnuts to a smooth butter, scraping the sides as needed so they process evenly, about 5 minutes.
  • Add the cocoa, natural sweetener, vanilla, salt and oil to the food processor and continue to process until well blended, about 1 minute.
  • The finished spread should have the consistency of creamy peanut butter; if it is too dry, process in a little extra hazelnut oil until the desired consistency is achieved.
  • Remove to a container, cover and refrigerate until needed.
  • Allow the spread to come to room temperature before using, as it thickens considerably when refrigerated. It will keep for at least a week.
  • Place 1 TBS nutella in between each cookie to make a sandwich.

"Healthified" Cookie = 144 calories, 13.8g fat, 2.4g protein, 3.3g carbs, 1.9g fiber (86% fat, 6% protein, 9% carbs)

“Healthified” Nutella = 110 calories, 3.4 carbs, 2 fiber

      Nutritious and Delicious has over 300 great recipes (it is a black and white cookbook). Secrets only has a few recipes and is a nutrition book about balancing our hormones and moods. 😉

    Going sugar free has completely healed me of migraines. I had no idea it was sugar that caused them. Going grain free has almost completely cured my joint pain. I have terrible knees and they used to ache, daily. After reading that grain caused inflammation I stopped eating it. I’m on my 2nd pregnancy (6 total) grain and sugar free and I have noticed I don’t pack on pounds quickly and have more energy.

    Eating gluten-free and greatly limiting my sugar intake is changing my life! I’ve lived with debilitating muscle pain and gut issue for years. There were times when I’ve just wanted to die.     I started Atkins almost 2 years ago.A friend on a forum turned me on to your site. Besides cleaning up my eating habits, I saw my belly shrink before my eyes! It was amazing. I look like I’ve lost a lot more than 20 lbs. My blood work at the doc was great! My guy and I eat pretty clean and mostly organic. We feel so much better eating this way! If I do go off ‘plan’ and eat sugar and/or a bunch of grain, my digestive system freaks and I’m so bloated. Low-carb, low/no grain, and sugar-free are the way to go.     I can’t seem to find this info anywhere though: are lentils/pulses allowed on the diet or are they too starchy?

    I need to lose weight. I have a fibroid, which feeds off of the excess estrogen in my body. I can’t get rid of it because surgery is too risky, so weight loss may be my only hope. Aside from that, I’m just getting tired of life passing me by.

    I started low carbing again, after quitting before. This time I try to be more creative with it, and use more willpower. It’s can be difficult when I’m always bombarded with temptations from people I know.

    Noticed before I started low carbing that my feet and ankles were swelling horribly. I also had candida. I was exhausted. I notice that all of those things have gone away and I just feel a lot better than I used to. It’s much easier for me to get motivated, when I am a difficult person to motivate.

    I can also tell I’ve gone down a size but I refuse to weigh myself yet.

    So hopefully, next year or so, I’ll be in the best shape to deal with this health issue of mine. 🙂

    I would always notice that whenever I ate too much fruit or carbs, I would immediately feel a bit dizzy, kind of similar to a sugar rush- even if it was a whole grain or fruit. I am not completely grain free, but since I decreased my carbohydrates and added in ketogenic foods, I have felt a huge difference in my health.

    I started just wheat free to treat Hashimoto’s, haven’t noticed the symptoms improving yet there, but my arthritis is incredibly improved.     I have lost 34 pounds, lots of old age pain, planters’ faciatis(sp), back/hip pain, a multitude of rashes and before I started this way of eating – I had 3 episodes of swelling of the face, I think my throat swelled too – which I was given steriods. Now 1 and 1/2 year later I have had none of those symptoms. I also had rapid heartbeat in the night. I have used a CPAP for years and went for a sleep study earlier this year – My “number” for air was reduced. I’m sleeping soundly for 6 to 7 hours ( still working on that) and am more rested than ever. I recently walked in a 4-miler walk/run which I have never done before. Last July I ziplined through a forest – which I never would have ever done. So many great things. I still am tweeking as I am in a stall of weight loss, but I feel so good and am eating so differently. Thank you for your blog and recipes!

    I am not the ‘jump in with both feet’ kind of person. I have been wading around the edges of the Maria way of eating for a couple months now and still , I’ve noticed changes in my body. I don’t ache quite as much, my mind seems a bit clearer and I feel a little more in control of my health. I am not as tired anymore either, unless I eat something I shouldn’t be eating anyways, like rice. I love rice.
    I am cautiously working on introducing my husband to a grain free lifestyle. He poo-poos anything health related so its going to be tough. I made your sub buns last night and they turned out awesome!!! I was very nervous because I read every single review and it seemed it can be hit and miss, but they were a hit. I told my husband they were gluten-free and he was very suprised. He said they were really pretty good , nice texture. HIT!

    I started on a grain free and sugar free diet about 1.5 years ago when I was diagnosed with diabetes and was told I needed eye surgery. I almost lost my sight to that disease but fortunately four surgeries were able to put me back together. My blood sugar A1C was 11%! I changed my eating habits and stayed active and I have totally reversed the diabetes (without any meds or insulin). Food and exercise are the ticket! My blood sugar now is around 5.8% and I continue to learn new ways to improve my diet. Maria is a great resource for me. Her books and blog have helped me make it this far. Oh, by the way I also lost 30 pounds and feel like a new person!

    I have struggled with Hashimoto’s for almost 2 years now. The slew of Dr.’s I have seen have said since my numbers are “where they should be,” I should feel great.     I have been wheat free for two years and grain free for 6 months. The first thing I joyfully lost was the joint pain! I went from crying with every stair climb in our two story house to hiking mountains without even noticing a joint. I have lost 58 pounds. Now working on following Maria to HFLC for more amazing results!

    Hi Maria, I’ve been eating this way since January to deal with complications from Chronic Lyme Disease. My symptoms have improved greatly, candida seems to be finally gone, and have lost 45 pounds of fat and three sizes!!!!! I thought the weight would never come off and it’s still coming off regularly. My skin, hair and nails are all great too. Last night I was craving a snack and ate cheese, salami and kalamata olives – a fat snack for sure but it’s so nice knowing that I am burning fat for fuel instead of carbs and now I actually crave fat/protein. Without your website and Carolyn’s over at All Day I Dream About Food, I would have starved to death by now, or else gone back to the old way of eating and been hospitalized. So thanks!

    I made these cookies but turned them into cookie cups with a mini muffin tray and good quality mini muffin parchment cups. It made 24. I made a huge batch of Yumtella as well, and filled the cavity in the cookie cups with it after baking (I also filled a few with xylitol jam). I made your keto crepes as well and sauteed them in butter after they were cooked and stacked and spread with Yumtella. Amazing. (I also did savory ones with spinach, onions, eggs and cheese). I omitted the extracts and only put a drop of stevia in as I prefer savory crepes.
