How Many Eggs Can I Eat?

I love eggs. I love deviled eggs, scrambled eggs, omelets, hollandaise sauce, bearnaise sauce, eggs Benedict on a keto bun, soft boiled eggs, you name it. I love how affordable eggs are and I love how versatile they are. There are so many ways to incorporate the healthy egg. Eggs have a perfect amount of fat and protein and cholesterol! Yes, I said cholesterol! I recently spoke on the Low Carb Cruise and I can’t tell you how many times I was asked at breakfast, “How many eggs can I eat in a week?” I get this question a few times a week on my phone consults too. Even those who understand that cholesterol is not the bad guy, most people still fear the delicious egg. One of the doctors at Low Carb Breckenridge stood up on stage to speak and lead with a photo of his day of eating and stated, “I ate 7 eggs today. I am giving my liver a break!” Yes, if you don’t get the cholesterol from your diet your liver has to make it!

My grandpa Vince survived his first heart attack at age 32, but with the diet that his doctor recommended it is no wonder his heart never healed.  He eventually required heart surgery at age 45, then another one at age 52. At that point, the doctors gave him 5 years to live; he made it 9 and died at age 61 on Thanksgiving morning. He was given nutrition advice from his doctor to never eat eggs, butter, lobster or saturated fat. He was living off of fake butter substitutes and popcorn. His doctor would be shocked if I fed him what I feed my own family today!

Cholesterol is not the bad guy that we have vilified it to be; it is vital for every cell in your body. You cannot live one day without it! It does not damage arteries, it repairs arteries! I like to refer to cholesterol as the fire fighters in our body. They help stop the inflammation that is occurring. When you kill the firefighters (cholesterol), sure your cholesterol numbers will go down, but did the inflammation (fire) go away? No, it didn’t.

Cholesterol is so important to the human body that nature has devised a backup plan in the event your diet falls short. When that happens, your liver steps in to make cholesterol to give your body a baseline level. The high levels of insulin that are released in a low-fat, high-carb diet also trigger the body to tap off leftover blood sugar into the liver to make cholesterol and triglycerides which are used for energy and fat storage.

In its natural, unstressed state your liver makes 75% of the cholesterol your body needs. The rest you have to eat, which is my favorite food group: butter, meat, whole-fat dairy products, shellfish and eggs.

If you deprive yourself of cholesterol, your liver overproduces cholesterol to make up the difference. This overdrive state can’t shut off until you start eating cholesterol again. So give your liver a break and get some cholesterol in your diet!

Most importantly, the biggest contributor to heart disease risk is inflammation. A well formulated keto-adapted diet is very low in inflammation. Sugar and carbs are the big culprits when it comes to increased inflammation. Coronary Artery Disease occurs when an LDL particle (usually a small dense one) gets lodged in a lesion (caused by inflammation) in the artery wall. It then releases its cholesterol into the artery wall which starts the formation of plaque. So if you have very low inflammation and no arterial lesions for the LDL to get stuck in, your cholesterol numbers aren’t really relevant. Stop the inflammation and you stop the coronary artery disease, regardless of LDL levels. This is how people can live with cholesterol numbers of 300 or more and have zero plaque in their arteries. So if you want to know your real risk for coronary artery disease, get a calcium score done (more on that HERE).

Pastured free range hens eating lots of bugs and other natural foods for their bodies result in eggs with 5 to as much as 11 times the omega-3 content!

I highly recommend purchasing pastured free range eggs where chickens are able to consume bugs and insects. It is well worth the extra money! You may hold a carton of $1.50 and a carton of $4.00 eggs and decide to save money on the cheaper eggs; however just think…people spend over $4 for a coffee drink at Starbucks but they complain about spending that much on a dozen eggs.

So the question is, “How many eggs can I have in a week?” The answer is, “As many as you like! Then your liver won’t have to work so hard!”

I will often fast during the day occasionally, then eat 2 chicken thighs, with skin, in coconut oil and butter, and some zucchini, squash, tiny bit of carrots, and green beans for dinner cooked in the same thing. I am full! I get under 20 carbs a day. Actually, today I still have 15 left to “eat”. But I am feeling great, and listening to my body to give me cues, real cues for the need for food. Not the desire for food. I eat when my body says feed me, not when my mind says I want to eat. 🙂 My goal is 135. I have to do a cleanse for a colonoscopy on Tuesday so I have to complete fast on Monday, so I may be at 138 by then! HAHA! Keep it up, the cravings diminished by week 3.

    Is there a difference in nutrient value in how you cook them? I can only eat scrambled eggs. I don’t like runny eggs at all.

    I recently purchased your 30 day Ketogenic Cleanse book. I was so sad that so many recipes require eggs. Not because I don’t love them, but because I’m mildly allergic. Allergic enough that my tongue swells at the edges, so my doctor said to nix them while being treated for mold (CIRS). How can I incorporate your recipes without the use of egg? You mention gelatin, but don’t give much advice on which recipes a gelatin egg could easily replace a real egg. Sigh…

    I got chickens in May! I get about a dozen eggs a week from them, and I buy at least another dozen to 3 dozen every week depending.
    I once did an egg fast for 5 days, and ate 8 dozen eggs in a week. Well, between me and my husband we did. He was shocked and started to complain at all the cost, but eggs are cheap, even if you buy the expensive ones.

    Back to my chickie babies. They are so fun to watch them chase grasshoppers, flies, any bug dumb enough to get in their run, I suppliment with meal worms and cricket parts, they also get scraps from the garden and from weeding. These eggs are fantastic! So yellow they are orange!
    EAT MORE EGGS!
    I used to think that runny eggs were gross, but now I can’t get enough of them, and even use that as a sauce for meat, veggies and salad.
