CANDIDA

Everybody has a sea of microorganisms, (bacteria, viruses, fungi) that reside in our intestines, throat, mouth, nose, you name it. Most of the time, these microorganisms do not cause illness, unless our resistance becomes lower. Candida albicans is a yeast that lives in the intestines, mouth, throat, and genitourinary tract of most humans and is usually considered to be a normal part of the bowel flora. Candida enters infants shortly after birth. In a healthy baby, the growth of the yeast is kept under control by the baby’s immune system. But, if the immune system is compromised and weakened, problems such as thrush can happen. Candida coexists in our bodies with many types of bacteria in a specific balance. Healthy bacteria work to keep candida growth in check in our body ecology. In a healthy body, the immune system keeps candida growth under control; but when the immune response is weakened, candida growth can happen too fast. It is an “opportunistic organism,” and will try to colonize all bodily tissues. The uncontrolled growth of candida is known as candida overgrowth. The first signs of candida overgrowth is nasal congestion, sore throat, abdominal pain, belching, bloating, heartburn, constipation, diarrhea, rectal burning or itching, vaginal itching and discharge, PMS, prostatitis, impotence, frequent urination, burning on urination, and bladder infections. But, if the immune system remains weak long enough, candida can cause fatigue, lack of concentration, mood swings, dizziness, headaches, bad breath, coughing, wheezing, joint swelling, arthritis, failing vision, ear pain, deafness, tearing eyes, muscle aches, depression, irritability, sweet cravings, numbness and tingling, cold hands and feet, asthma, hay fever, allergies, hives and rashes, eczema, psoriasis, chronic fungal infections.

The most common causes of candida overgrowth are antibiotics, steroids, over-the-counter anti-inflammatory drugs, oral contraceptives, mercury dental fillings, drugs or alcohol, chlorinated drinking water, meat or dairy products from animals fed antibiotics, and diets full of too much sugar and refined and processed foods.

If candida overgrowth is present certain foods should be eliminated and specific supplements, such as probiotics (NOT more anti-biotics) need to be incorporated. Click HERE to find the proper help.

FYI: I have conversion charts in my books on sweeteners if you don’t want to use a specific type of sweetener. I find mixing the 3 together creates a wonderful flavor and texture.

CRUST:
1/2 cup coconut oil or butter
1/2 cup Just Like Sugar OR erythritol
1/4 cup erythritol and 1 tsp stevia glycerite (OR Swerve)
1/2 tsp Celtic sea salt
3/4 cup blanched almond flour or pecan meal
1/4 cup coconut flour
1 tsp  baking powder
FILLING:
3 eggs, beaten
1 cup erythritol (or Swerve)
1 tsp stevia glycerite
1 cup NATURE’S HOLLOW xylitol syrup
2 TBS butter or coconut oil, melted
1 tsp vanilla extract
1 1/2 cups macadamia nuts

CRUST: Preheat oven to 350 degrees F. In a large bowl cream the butter and sweetener together until very smooth. Add the salt, coconut flour, almond flour, and baking powder into the butter mixture. Mix until well combined. Place into 4 small torte pans or one 8 by 8 pie pan and spread out over the bottom. Bake for 12 minutes or until lightly golden.

FILLING: In a medium bowl, beat the eggs with the sweetener. Add the butter, syrup, and vanilla then add the nuts. Pour into the crust (cover edges with foil) and bake at 350°F for 45-50 minutes or until set. Serve with my “healthified” ice cream! Makes 12 servings.

NUTRITIONAL COMPARISON (per serving)
Traditional Torte = 406 calories, 23g fat, 3.7g protein, 51 carbs, 1.6g fiber
“Healthified” Torte = 239 calories, 21g fat, 7.7g protein, 3.8 carbs, 2g fiber

      1.8 net carbs is too much? ( 3.8 carbs minus 2 g fiber) Personally, I can’t wait to try this. Everything I have tried of Maria’s has been fantastic!

    This sounds and looks delicious! However, I have a horrible time finding macadamias in East Texas. Costco in Dallas carried them and they are now discontinued. Any time I buy them at various other places, I end up throwing them away or returning them as they always have a bit of a rancid taste. Any ideas for sourcing these online without breaking the bank?

    Here, http://justlikesugarltd.com/whatis.html , they say that the chicory root used in JLS is a maltodextrin. If so, then how can this be good for us to use in quantities over the 1/2 tsp. serving size listed on their package?     Maria, I just bought Nutritious and Delicious and I have a question about a recipe. The Reuben Fritters on page 44 one of the ingedients is “1 tsp Essence, plus more for seasoning, recipe follows”. I can’t seem to find the recipe. Can you point me to it? Thanks!

    This looks so yummy, does the crust come out crispy, or more soft? Do you think it would work as well using hazelnuts in the filling?

    Just a note, the instructions for the filling note “add the pecans” – I think you meant macadamias.

  • ESSENCE CREOLE SEASONING
    2 1/2 TBS paprika
    2 TBS salt
    2 TBS garlic powder
    1 tablespoon black pepper
    1 tablespoon onion powder
    1 tablespoon cayenne pepper
    1 tablespoon dried oregano
    1 tablespoon dried thyme

    Combine all ingredients thoroughly. Makes 2/3 cup. Keep on hand instead of spice mixes filled with cheap “fillers.”

  • The crust is a soft chewy cookie like crust. It is SOOO good!

    I was just introduced to your blog this week and WOW am I excited! Can you tell me what I should get to treat Candida? I am pretty sure that it would help my husband and I significantly, but wasn’t sure if I needed all six supplements that are listed when I clicked the link above.   • Daphne, take the Candida Clear twice a day until the Candida is gone. Most people lose weight with this!

    We also keep the Cranberry Extract at home all the time because it is an awesome antioxidant and helps with urinary infections.

  • Hi, I just found your blog because I love reading about how to be more healthy and supporting your body. I have had some pretty bad stomach pains, diarrhea around PMS, feeling sick in the mornings, tired, depressed. I know this can be caused by many things. But the last couple of weeks white spots have appeared on my back. I was told this could be candida, so I bought a shampoo/cream thing for it. Do you think this can be related to my other problems, that the candida is in my whole body? I will certainly get the “candida clear”, but how do I need to change my diet?. Have you written about this?

  • Yes! Hanna! I write a lot about this in my books. I think that you should take a Bifido bacteria. We all take this everyday!

    Hi! Just to clarify if you have high candida present you have to stay away from sugar cause candida feeds on it?
    I’m trying to explain a few things to her. However her naturopath said the only approved sugar was stevia. So I’m wondering with candida if you can have swerve and just like sugar?

    Hi Maria 🙂 I have been eating your way for about a month or so now. I have just started getting really itchy, red spots on my torso. I got this when I tried Atkins so I know it is not because of a change in anything but the way I’m eating. I’ve tried searching online and everything I’ve found has said that it is candida but I have no other symptoms that you’ve mentioned above. Is this definitely candida or is it something else? I’m saving up to do a consult with you so I really hope this can be answered easily, the itching is driving me crazy 🙁
