It truly sounds ridiculous I know! When I wasn’t bingeing and purging, I severely restricted from food and water. It was a cycle of pure madness, and I never felt good…and yes! I do mean NEVER! Oh, of course I was a bible of calorie and fat scriptures! But, I did not know how to eat. I did not know how food had such a HUGE impact on not only ones body, but ones brain and spiritual health as well!

As I began to follow Maria Mind Body Health I began to purchase her books, and when I began reading her books I began to incorporate some of her healing techniques into the repair of my 35yr struggle of Bulimia and Anorexia. Along, with my clinically diagnosed Bulimia and Anorexia, I was also diagnosed with PTSD. During my 8yr recovery journey, in and out of therapist and treatment centers, I was left with the results of being on six different medications, and a 50lb weight gain. Yeast Overgrowth

I just read a funny yet disturbing article on NPR called, Auto-Brewery Syndrome: Apparently, You Can Make Beer In Your Gut. A 61-year-old man was getting drunk in the middle of the church, but there is one major catch, he didn’t drink a drop of alcohol that day! Sure, this Texas mad did have a history of brewing his own beer, so was he still drunk from the previous evening? Nope, his gut was fermenting the carbohydrates he ate into alcohol!

One day he went to the emergency room because his symptoms, such as dizziness, were so bad. The nurses ran a Breathalyzer test and his blood alcohol concentration was a massive 0.37 percent! That is about 5 times the legal limit for driving in Texas. They basically blamed him for being a “closet drinker” at first, but a gastroenterologist and Cordell wanted to really see what was going on. They researched the man in an isolated hospital room for 24 hours and gave him high carbohydrate foods and would check his blood-alcohol. At one point in this 24 hour period, it rose to 0.12%! Yep, he had his own Sam Adam’s Brewery in his gut!

What was happening is he basically had an extreme case of yeast overgrowth, also known as candida. The strain this man had was called Saccharomyces Cerevisiae. Eating a diet filled with starch, yeast, and sugar causes your gut to over-produce these organisms which causes a bunch of issues, besides getting drunk!

Everybody has a sea of microorganisms, (bacteria, viruses, fungi) that reside in our intestines, throat, mouth, nose, you name it. Most of the time, these microorganisms do not cause illness, unless our resistance becomes lower. Candida albicans is a yeast that lives in the intestines, mouth, throat and genitourinary tract of most humans and is usually considered to be a normal part of the bowel flora. Candida enters infants shortly after birth. In a healthy baby, the growth of the yeast is kept under control by the baby’s immune system. But, if the immune system is compromised and weakened, problems such as thrush can happen. Candida coexists in our bodies with many types of bacteria in a specific balance. Healthy bacteria work to keep candida growth in check in our body ecology.

In a healthy body, the immune system keeps candida growth under control; but when an immune response is weakened, candida growth can happen too fast. It is an “opportunistic organism,” and will try to colonize all bodily tissues. The uncontrolled growth of candida is known as candida overgrowth.

The first signs of candida overgrowth are nasal congestion, sore throat, abdominal pain, belching, bloating, heartburn, constipation, diarrhea, rectal burning or itching, vaginal itching and discharge, PMS, prostatitis, impotence, frequent urination, burning on urination, and bladder infections. But, if the immune system remains weak long enough, candida can cause fatigue, lack of concentration, mood swings, dizziness, headaches, bad breath, coughing, wheezing, joint swelling, arthritis, failing vision, ear pain, deafness, tearing eyes, muscle aches, depression, irritability, sweet cravings, numbness and tingling, cold hands and feet, asthma, hay fever, allergies, hives and rashes, eczema, psoriasis, chronic fungal infections.

Causes of Candida:Low Carb Graham Crackers

1. Antibiotics

2. Steroids

3. Over-the-counter anti-inflammatory drugs

4. Oral contraceptives

5. Mercury dental fillings

6. Drugs or alcohol

7. Chlorinated drinking water

8. Meat, poultry or dairy products from animals fed antibiotics

9. Sugar, starch, wheat, and yeast consumption

If candida overgrowth is present certain foods should be eliminated and specific supplements, such as probiotics (NOT more anti-biotics) need to be incorporated. Even things like most vinegar must be eliminated. Coconut Vinegar is the only vinegar I use in my recipes because it would not increase the candida overgrowth.

Another Testimony on Candida

Maria, I wanted to tell you that I have had an unexpected benefit to starting eating your way. I haven’t seen you address this before, and maybe it is a bit “gross”, but for the first time in YEARS, my tongue is pink! I can’t remember the last time I didn’t have a thick white coating on my tongue. I still have a long way to go, but I’ve started eating the Maria way about 4 weeks ago. Low Carb Graham Crackers

3/4 cup coconut flour
1/2 cup vanilla whey or egg white protein
1/2 tsp Celtic sea salt
1 tsp baking powder
1 tsp cinnamon
6 TBS coconut oil OR butter softened
1/2 cup Swerve
1 tsp stevia glycerite (optional, I think blending sweeteners gives a better taste)
1 TBS vanilla
2 eggs

Preheat oven to 300 degrees F. In a medium bowl, mix together the first six ingredients. In a separate bowl cream together the coconut oil, sweetener, vanilla, and eggs. Slowly add in the coconut flour mixture until you have a thick dough.

Low Carb Graham Crackers

Grease 2 pieces of parchment paper with coconut oil spray (click HERE to find the one I like). Place dough in between the greased parchment and roll the dough to about 1/8 inch thick (try to make it even throughout or the thinner areas will burn). Remove top parchment and use a pizza cutter to score the dough into Graham cracker shapes. Use a fork to poke holes in down the cracker (see photo). Place the parchment onto a cookie sheet and bake for 15 minutes or until light golden brown. Serve with unsweetened coconut milk or almond milk.

CHOCOLATE VARIATION:
-Replace:
1. Chocolate whey for vanilla whey
2. Chocolate extract for vanilla extract
3. Chocolate stevia in place of stevia glycerite
-Add in 1/4 cup unsweetened cocoa powder
NUTRITIONAL COMPARISON (per serving, 11 servings per batch)
Traditional Graham Cracker: 130 calories, 3.5g fat, 2g protein, 24g carbs, 1g fiber
“Healthified” Graham Cracker: 129 calories, 9.3g fat, 3.9g protein, 5.1 carbs, 2.9g fiber (65% fat, 12% protein, 16% carbs)

Skim milk: 90 calories, 12 carbs, 12 g sugar
Unsweetened Almond Milk: 40 calories, 1 carb, 0 g sugar
Unsweetened Coconut Milk: 50 calories, 1 carb, 0 g sugar

FYI: almond milk has twice as much calcium as dairy!
