Intermittent Fasting

Breakfast isn’t the most important meal of the day … “breaking your fast” is!

I remember when I first heard about “intermittent fasting.” I thought, no, no, no. This is not good for anyone who wants to maintain their muscle. But after diving into what happens when you fast on a well-formulated keto-adapted diet, I realized that not only do you maintain your muscle, but there are other amazing benefits as well. As I started putting this into practice, I not only experienced the physical benefits, but the mental benefits were outstanding! I now work and write early in the morning in a fasted state for about three hours and my mind has never been clearer.

Intermittent fasting came into my life almost by accident. With the increased amount of fat I ate (while also moderating my protein), not only was I losing weight, but I was no longer “hangry.” When you are eating the highest nutrient-dense foods like herbs, spices, organic egg yolks, and organic organ meat, your cells are satiated.

Fasting is not a diet. It is a pattern of eating. You can eat very poorly while practicing intermittent fasting, a decision that will cause you to not reap as many benefits than if you were to eat a well-formulated keto-adapted diet. Fasting really isn’t as drastic as it sounds. When you sleep, you are starting to fast a little. During first 10 hours after eating, you are digesting and absorbing nutrients. It isn’t until after not French Toasteating for 10 hours do you actually get into a fasted state. If you keep your window of eating open to only 8 hours of your day, then after 12 hours of not eating, you get into a fasted state where you can burn fat more efficiently.

I know this may sound impossible. What I find interesting is that with most dieting, the mental part is easy but the physical part is hard. What I mean by that is knowing you need to cut carbohydrates and gluten is easy, but the physical act of making those changes is the hard part. With fasting, it is the mental part that blocks many clients from even trying it. It sounds impossible, so they don’t even try. I was there, too. I did not like the idea of fasting or at least I thought I didn’t. I liked eating. But since I was a sugar burner, I always wanted to eat. Now that I’m keto-adapted, I save so much time by not being plagued by thoughts of food all day.

To make this dairy free (which helps with weight loss for many of my clients), make sure to use Jay Robb's egg white protein powder and instead of stirring in cream cheese add in the reserved yolks.

Ingredients
  • PROTEIN BREAD:
  • 12 eggs, separated
  • 1 cup Jay Robb unflavored egg white (or whey protein)
  • 4 oz cream cheese, softened (OR reserved yolks)
  • FRENCH TOAST:
  • 2 eggs
  • ½ cup unsweetened almond milk (or coconut milk)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • SYRUP:
  • ½ cup butter (or coconut oil)
  • ½ cup Swerve Confectioners
  • ½ cup unsweetened almond milk
Instructions
  1. TO MAKE BREAD:
  2. Preheat the oven to 325 degrees F.
  3. Separate the eggs (save the yolks), and whip the whites for a few minutes until VERY stiff (I use a stand mixer on high for a over 8 minutes).
  4. Gently mix the protein powder into the whites. Then slowly fold the softened cream cheese (or reserved egg yolks) into the whites (making sure the whites don't fall).
  5. Grease two bread pans with coconut oil spray and place the "dough" in the pans.
  6. Bake for 40-45 minutes or until golden brown.
  7. Let completely cool before cutting or the bread will fall.
  8. Cut into 18 slices.
  9. I keep this bread in the freezer at all times to make sandwiches.
  10. TO MAKE FRENCH TOAST:
  11. Grease a cast iron skillet with coconut oil and heat to medium high.
  12. In a medium bowl, combine 2 eggs, unsweetened almond milk, vanilla and cinnamon.
  13. Dip the slices of protein bread into the egg mixture.
  14. Place the drenched protein bread onto the hot skillet.
  15. Grill until golden brown on both sides.
  16. Remove from skillet and repeat with remaining bread.
  17. TO MAKE SYRUP:
  18. Meanwhile, make the sauce by placing the butter in a saucepan over high heat. Using Swerve: Before you begin, make sure you have everything ready to go - the almond milk and the butter next to the pan, ready to put in. Work fast or the sweetener will burn. Heat butter on high heat in a heavy-bottomed 2-quart (2 L) or 3-quart (3 L) saucepan. As soon as it comes to a boil, watch for specks of brown (this is brown butter....so good on veggies!). Immediately add the Swerve and the almond milk to the pan. Whisk until sauce is smooth. Let cool in the pan for a couple minutes, and then pour into a glass mason jar and let sit to cool to room temperature. Store in the refrigerator up to 2 weeks.
  19. Place the French Toast on a plate and top with syrup. Enjoy!

“Healthified” Bread = 75 calories, 5.7g fat, 6g protein, trace carbs, 0g fiber (69% fat, 31% protein, 0% carbs)

Traditional French Toast = 299 calories, 14g fat, 4.3g protein, 39g carbs, 0.8g fiber
"Healthified" French Toast = 125 calories, 10g fat, 6.4g protein, 0.7g carbs, 0g fiber (72.3% fat, 20.5% protein, 2.2% carbs)

Eating out and making healthy choices for your body can be tough! Ordering an omelet on your Pure Protein and Fat days should be a safe bet, but think again! Clients often complain about acid reflex after a dining out experience; could it be hidden wheat in the OMELETS? YEP!  IHOP adds pancake batter to their omelets. That’s right – they add sugar, carbs and WHEAT to their eggs for the omelet base for “fluffiness”… yuck!

A spinach and mushroom omelet is 24 carbs and 7 grams of sugar! That just isn’t right.

    I’ve been following the gluten and sugar-free lifestyle for quite some time. This past Friday I ate pizza crust. BIG mistake! I had no energy yesterday and wanted to sleep all day. My stomach hurts (constipation) and I’m puffy. Detoxed all day yesterday and I’m continuing today. I HATE this feeling! My tinnitus is very loud but not sure what is triggering that.     I just purchased the 30 day plan. I’m still adapting because I’m stocking up on ingredients. Even though I’m not yet 100%, I’ve been losing weight, almost 3 pounds this week. I already notice the difference in my joints. The one question I have is about almond milk. In the past, I discovered it was not my friend. I used it for about 2 weeks and had intestional issues. When I stopped using it, everything was fine again. What can I use as a substitute? Thanks.

      You can make your own nut/seed milks. Most recipes use the ratio 1 cup nuts to 4 cups water. I usually use more water…

      Sometimes it’s not the actual NUT in the nut milk causing the problem – but the additives/preservatives, like carrageenan – that’s why I recommend trying to make it yourself.

      That said, you can find other nut/seed milks at the store like coconut, flax, etc.
      Or simply buy canned coconut milk and dilute it.

      Regular milk would work too…but it would have more carbohydrates.

    The best thing about this lifestyle is how it has empowered me. For years I felt like I was at the mercy of doctors, I felt like something was wrong with me because I couldn’t lose weight, I lacked focus and energy, suffered from anxiety and ADD, had those dreaded afternoon slumps, felt insecure about my skin problems and couldn’t control my cravings for sweets. I went to doctor after doctor, spending more money that I care to remember trying to find the elusive cure to all my ails. I was so frustrated.

    I saw this posted tonight and went straight to work to make a loaf of protein bread (which I had been thinking to do for the last week but just hadn’t gotten around to it). Whelp….stuffed my bread pan so full of the white fluffy goodness that it spilled over and made these almost perfect white puffy breadsticks on the side of my bread pan in the oven as it baked. So after i pulled it out of the oven i got a tasty treat of warm protein breadsticks i slathered with butter. Cant wait for my french toast in the morning!

    I just started eating the Maria way. I have tried everything over the years. After being diagnosed with Rheumatoid Arthritis and Fibromyalgia 12 years ago, I followed a vegan diet. I felt less pain and put the diseases in remission but I never could get my weight under control unless I worked out twice a day and followed severe calorie restriction. I am a child of the fat free era, so it has taken a bit to throw off that way of thinking. I started on GAPS diet a few months back and really felt better, now I have transitioned into the Maria way. I have lost 6.5 pounds in the last 8 days and I feel better. It was a tough few days getting through the “Keto flu” but I am glad I fought through it. Now I feel great; I am not very hungry and I sleep through the night. I am excited to continue this lifestyle and see more benefits from it. Thank you.

    I was strict Primal for about 8 months. Lost around 45 lbs (for a total of 75). Felt great aboout myself and never got sick. I never really felt BAD even at my heaviest 210lbs. But now, that I’ve fallen off the wagon for a few months and started consuming grains and sugars again, all my joints hurt and I have a constant runny nose that won’t stop.     I have gone from a size 14 (transitioning to a 16) and now I am a comfy size 12 since July 27. My husband has lost 20 lbs and no longer huffs and puffs when he bends over to tie his shoes.     Maria–just had to tell you of a funny experience I had with your Amazing Maria bread: I made a loaf (almond meal version), cut it up into cubes and toasted it. I used half for stuffing, and ran the other half through the food processor to make bread crumbs for future use.

    Stuffing went over really well, but that’s not the funny part. I used some of those breadcrumbs with ground meat to make burgers, and THE BURGERS SWELLED UP JUST LIKE YOUR BREAD DOES! I have no idea if this was supposed to happen, or if the psyllium has a second life, or what. The burgers were tasty and juicy, but really fat compared to the usual shape.

    We will be making Maria breadcrumbs and “Maria” burgers again! I also used some eggs and crumbs (+ gelatin as per your trick) to coat chicken with just last night–no, the chicken didn’t swell up, but it was moist and flavorful just the same. My cat went NUTS over it!

    Going grain and sugar-free was something that has helped me immensely.     Hi Maria! I just made the syrup with coconut oil, since we are not eating any dairy (yet). How long is it good for if I store it in the fridge? And I am guessing I’d have to warm up the syrup before using it since the oil would go back to a solid consistency? Keep up the great work! There is not a single recipe we have tried that we don’t like and we have tried out A LOT! 🙂

      You have to make sure the whites are very stiff. I beat in stand mixer for 5 minutes or so. 🙂

    Hi Maria, I very much appreciate your blog, informative as well as inspiring!
    I’m low carb since 7 years. Below 20g carbs per day the last two years. No grains and full fat dairy.
    I’ve tried intermittent fasting. I really like not thinking about food during the fasting window, I feel I become more focused but when I have my first meal braking the fast I always get a splitting headache. I’m 32years old, fairly easily stressed and well get worked up quite easily (high adrenaline, trembling etc). Found some posts online hinting that I should eat very regular meals instead.. Do you cover anything on adrenal glands in your book? I have pco (but ovulating on this low carb diet) and want to improve my insulin sensitivity..
    If you have any thoughts on this quite broad question of mine I’d much appreciate it.

      people with adrenal fatigue (issues), shouldn’t do intermittent fasting – this isn’t to say they have to eat every two hours or something…but the meals SHOULD be more regular.
      Fasting can be very hard on the system – especially for those with adrenal issues.
      Women with PCOS often have blood sugar issues as well…so fasting: not good.

    Yesterday when I was using coconut milk (for one of your recipes actually!), I noticed that the thick cream on top has the consistency (well, almost) of cream cheese. Since I cannot handle dairy (whey isolate is fine for some reason…), could I sub in the coconut cream for the cream cheese in this recipe? Do you think it would work?
