My baby boy Kai is turning 7 next week and he begged for me to have Leaf & Love organic sugar-free lemonade drinks at his party. I love that he enjoys healthy keto drinks like Leaf & Love so of course I ordered a ton.

I can’t believe my baby boy is turning 7 years old! If you would have told me that “everything happens for a reason” when Craig lost his job and our adoption was put on hold, I would have been furious with you and I despised hearing that. It was such a hard time in our life; we lost everything, even our cars and all I wanted was to be a mother. This was a terrible time of sadness for us. There were many times I didn’t want to get out of bed but having my blog and creating new recipes was my happy place and motivation. I loved waking up early before the sun to read all the sweet comments you all would write about a recipe I put out.

My mom said something so comforting during this hard time in our life. “Maria, your baby just wasn’t born yet. You need to wait.” I burst into tears and I’m even crying as I write this because… you know what? She was right. Micah and Kai were meant for us. Our love was written in the stars.

Life is like waves of the ocean; there are high times and there are low times. I now know that the low times and the struggles we went through helped me be gracious for the gifts I have been given. And I am grateful everyday for my boys.

    Hi Maria,
    I’ve been looking into doing Keto because I do suffer from IBS. The Paleo diet does not work for me because there are a number of vegys that I just can’t eat (I’ve been looking into low FODMAP foods) plus I found that many grains don’t sit well with me either. So when I came across Keto, having a high fat diet just might work for me. I have never been a high carb girl simply because I would then end up constipated ( sugars leave me constipated while too much fibre ie: vegys leaves me with the opposite) I never thought to up my fat to replace carbs!! Sounds like a good plan for me! I do have a question: I have been internet seeking on this topic and that seems to be a lot of disagreements about when to workout. Some say 1st thing in the am before you eat, others say in the late after noon. Myself and can see doing come cardio in the am when I first wake, cause your body would tap into the fat storage to burn but I also life weights and I don’t think I could do that on the empty stomach first thing in the AM. My understanding was that your muscles needed some carbs to burn to perform the exercises and then eat some carbs after to replenish them after a weight training workout. What are your thoughts? Should I do cardio in the AM on an empty stomach and then eat? And on my lifting days when is the right time of day to lift and should I eat before and after? With or Without carbs? ( I though carbs would take one out of ketosis?) Help? Sorry to bother you with this it’s just the more I look into this matter the more mixed information there is out there!

    Maria, I too had a similar situation except I did have a successful pregnancy and miracle daughter (now 14) but was unable to have a second child. Drs said it was a mystery. But 5 years of infertility followed by three miscarriages, we brought home our son from Russia! He just turned 9 this summer. I was inconsolable during the last miscarriage and i found few words comforting at that time. However I would do it all over again because I just know Ivan was created for us! We are coming up on his 8th Gotcha Day and our Keto Family would love to celebrate with some healthy lemonade 🙂

    My life is wonderfully kind of crazy right now. Wonderful because all the old way and structure are being stripped away which is my chance to build a new. During this process my Keto lifestyle is seriously on again off again because of old stress comfort foods etc. I know a lot things to replace the old but I am not even cooking much right now as there just isn’t time getting rid of 30 years and two other generations and doing it all just by myself and against the clock of foreclosure too and all I have is the equity in this house my mom left me soooooo big background view of why I am grateful in general cause something new is forming too!
