Ingredients
  

  • 5 slices bacon cut into 1/2 inch pieces
  • 1/4 cup yellow onion chopped (or green onions)
  • 1 jalapeño pepper seeded and sliced (optional) (up to 3 peppers, depending on desired heat)
  • 1 cup bacon mayo or mayo
  • 1/4 cup coconut vinegar (or apple cider vinegar)
  • 2 tablespoons Natural Sweetener (or 1 drop stevia glycerite)
  • 5 cups shredded cabbage (about 1 large head)
  • 1 large tomato yellow, chopped (or 6 yellow cherry tomatoes, halved or quartered)

Instructions
 

  • In a large skillet, fry the bacon, onion, and jalapeños, if using, for about 5 minutes, or until bacon is crisp and the onion is browned. Remove the bacon mixture from the pan with a slotted spoon and reserve the bacon fat.
  • In a medium-sized bowl, combine the bacon mayo, vinegar, natural sweetener, and 1/4 cup of the reserved bacon fat. Stir well to combined.
  • Place the cabbage, chopped tomato, and bacon and onion mixture in a large bowl. Pour the bacon mayo mixture over it and stir until well coated. Cover and chill for at least 20 minutes and serve.

Coleslaw

The best coleslaw I ever had was in Maui Hawaii at the Paia Fish Market while we were there for our honeymoon which was over 12 years ago and my diet was much different then! I even put ketchup on it, man… my diet is so different now! I’m guessing that the coleslaw was filled with vegetable oils and sugar but I still remember it being so tasty. So this is my attempt at “healthifying” it!

This little fish market was such a gem. We decided to eat at 2pm in the afternoon since we were warned about how busy it gets and we still had to wait for a table to eat. The tables were just picnic tables in the middle of the room and you would sit next to other vacationers and locals while you listened to everyone moan in the “foodgazm” they were experiencing. It was fun visiting with strangers finding out what activities we should try while we were in paradise.

After our lunch, we walked across the street to watch wind surfers enjoying the sun. I think I would have a hard time going to work in such a beautiful place. I would be taking a lot of “sick days!” Another Great Testimony

    I am considering trying the diet plan , but when i read the blog attached to the corn beef and hash meal, it alarmed be regarding insulin resistance. I do have a fatty liver and feel that I also have insulin resistance, but i am not diabetic. When i lose the weight, my fatty liver improves drastically. What is your advice???

      I think you misinterpreted what is being said. What is happening is a good thing. Your muscles are preferring the ketones and resist the glucose. What is more important is that your A1C will go down dramatically with this lifestyle and that is your real indicator of inflammation and metabolic syndrome.

      I would be careful with any breads not made from scratch. I haven’t seen one yet that didn’t have ingredients I don’t like. They have a few other products are good, but in general, I would consider their products as good for maintenance or when you are in a pinch. 😉

The knowledge you have of a wonderful lifestyle we can all implement in our own lives is out of this world, great!!! I’m preparing my mind for the change…to follow you. I want to have arms like yours…you look amazing! In 2009, I competed in two figure fitness competitions and have been wanting to compete again…still in my plans, especially this year, when I turn 40. My setbacks were lack of definition in my arms. I have been working to obtain those toned arms since, but I have not been successful 🙁 Perhaps if I follow the “Maria way” I may find my answer!!

    Last night, I made your Beef Broccoli in my new slow cooker…I LOVED it, so did the boyfriend! Tonight, I will be making this wonderful looking cole slaw AND I will also make your homemade mayonnaise!! I’m so looking forward to it. I’ll let you know how it all turns out.

    I just purchased your Keto-Adapted book…Sshh…don’t tell…I have been reading bits and pieces at work…I can’t put it down 🙂 I think this lifestyle will do me much needed benefit in my health. I suffer from chronic constipation (I have not been diagnosed, as I refuse to see any MD), I sometimes don’t go #2 for 4-5 days or more sometime, but I still get/feel hungry…I hate it!!! I need serious help…I did read some of the suggested supplements you recommend, i.e. probiotics (which I have), magnesium and Vitamin C…I’ll be trying that too!

    OK, I’ll stop my rambling. I know I need to schedule a consult with you as I don’t want to just try to heal myself and be all over the place…I need to have a plan.

    new to LCHF diet and LOVING your books. I am allergic to almonds so can’t use almond flour. I am wondering if you have a standard substitution measurement for coconut flour to almonds, i.e. 1cup almond flour +1 egg = 1/3cup coconut flour + 3eggs. would really like to make the pie crust in your savoury cookbook. Also love to have a recipe for croissants…. [bagel recipe is awesome 🙂 ; lemon poppy seed muffins VERY popular in my house! ]

    Forgot to say, THANK YOU for the decision re: advertising. I can only imagine how frustrating that must have been for you to be on your site and see sugar-wheat-gluten-chemical filled products advertised! A couple times I saw ads, kind of mixed in with things like your Amazon store link, and I had to double take,…. and then realize you weren’t promoting that product. Good call… the monetary impact will, I feel sure, be replaced by sales from people who appreciate your principled stand. Kudos!

    loved the recipe!! I had to tweak b/c I didn’t have everything. -I used Maria’s baconaise mayo & only had 25% of what recipe called for. So, I only did 1/4 of the recipe.. I kept the bacon & onions the same…. added a bit too much cabbage (but still so good, just not as creamy)… & had no tomatoes, so I used orange bell pepper… Sprinkled 1/4 tsp of Celtic Sea salt.

    A recent IgG Elisa shows me reacting to any kind of nuts, sunflower, sesame and coconut – all good sources of fat. I also react to some proteins, greens, gluten and yeast and some spices. I know if I eat coconut flakes I get instant reflux and heartburn, but that doesn’t seem to happen with coconut oil. Is there a different composition. Could I eat coconut oil, coconut aminos, coconut milk? I have been restricting myself to ghee but it doesn’t work well in many recipes as well as I do not particularly like the taste and texture. If no on the coconut oil, what could I substitute.

    Great cole slaw recipe! I only needed 1/2 head of cabbage for five cups, so after mixing the “mayo” I started adding it slowly and only used 1/2 the mayo recipe, so I saved it for the other 1/2 head of cabbage!

    This was delicious. I added one red pepper to the recipe since those are my favorite! Added about 6 net carbs to the whole recipe. Even my husband like this one. One serving size was a whole meal for me. Great summer recipe. I love things you can eat cold.

    Hi Maria. I have been trying to follow a keto diet for about a month now. I have only lost 5 lbs. so far. Everywhere I look the macros are different. Currently Im at about 18g (5%) carbs, 140g (40%) protein and 86g (55%) fat. Im not losing any weight and am frustrated. what am I doing wrong? Are these macros correct? I am 5ft 6in tall and weight 145 lbs. I do not drink and my exercise at the moment is walking 30 minutes most days. Any help would be appreciated. Thanks for all you do, Maria!

      If those are total carbs (not net) that is good. But you are getting way too much protein and not enough fat. Try to get 70-80% fat and keep protein in the 50-75 grams a day range. I talk about it in detail in my book Keto-Adapted. 🙂

          I always count total carbs. I have seen many clients get kicked out of ketosis with too much fiber. 🙂

            Maria, I have to admit I was skeptical about the meal plan. but I was wrong, wrong, wrong. it makes it really easy and saves me so much time and just teaches me the right thing. you really did do a fabulous job. thank you.     Where do I find coconut vinegar? Never heard of it. Can I substitute another vinegar?

      If you click on the name in the recipe it will take you to where you can buy it. Otherwise you can use apple cider vinegar. 🙂

    I made this and it was wonderful… ty Maria. I plugged all the ingredients into 3 different recipe builder and the macro’s don’t come close to yours. Your recipe ingredients doesn’t list the 1/4 cup of bacon fat that goes into the sauce, it is just mentioned to add in the instructions… do you suppose this got missed when you plugged in the 3’s?

      Hmm, this has bugged me all night lol. I see what I did wrong with the bacon. I added the bacon and then the bacon fat as two separate ingredients… so I fixed that but I still can’t get to your numbers. No biggie, as long as I log exactly what I used (as recipe indicated) I will go by the numbers I get. Sorry to hash this out here. 🙂

        You have to check every ingredient. Calculators put ingredients in (higher sugar bacon, etc) that don’t work out. 🙂

      Just try to make the fat grams more than the protein grams and the total carbs as low as possible (10g a day or even less). 🙂
