Before my job as a nutritionist, I worked at a fun place called Camp St. Croix. We would perform The Lorax to school groups every week. Dr. Seuss Day will always have a special place in my heart.

Green Eggs and Ham: Avocado Hollandaise

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients
  

  • 1 ripe medium avocado peeled and chopped
  • 2 egg yolks
  • 1 TBS fresh lime or lemon juice
  • 2 TBS MCT oil heated (or bacon fat, heated)
  • 1/2 tsp Redmond Real salt
  • 1/4 tsp cayenne pepper if desired
  • 8 poached eggs
  • 8 thin slices of ham or Canadian bacon
  • 4 Protein Buns

Instructions
 

  • Place the avocado, yolks and lime juice in a blender and puree until smooth and fluffy, about 2 minutes.
  • With the blender on, drizzle in the very hot oil and puree until combined.
  • Season with salt.
  • Add cayenne if desired.
  • Serve the hollandaise over poached eggs, ham and a toasted Protein bun.

    I am wondering whether the egg yolks get cooked when the ratios of cool/cold ingredients to very hot ones is vastly different from that in normal Hollandaise sauce recipes? (For that matter, I wonder whether they get cooked or adequately heated using the normal method.) I am speaking of the safety of the egg yolks….

      Yes, if you are concerned about the quality of your eggs, you can heat it gently until it is 150 degrees F.

        Thanks, Maria. I have been hearing about the safety issue concerning raw or undercooked eggs for many years, so I figured folks should be aware of this and obviously proceed at their own risk. I have never taken special measures because of that, other than getting fresh eggs (certified organic and free range, etc.) when I am making something that results in uncooked or undercooked eggs.

    This sauce is darn near what I make for vanilla pudding–just take out the lime juice, salt, and spices, and substitute vanilla and sweetener (then refrigerate until dinnertime). Sure, the pudding’s green, but who cares? The taste and texture are TO DIE FOR!!

      I don’t bother with heating the MCT oil, and I use 1 envelope of coconut cream powder (+ 1/2 c. water)–just dump everything into the blender (powdered coconut cream, MCT oil, egg yolks, avocado, vanilla, and sweetener–we use liquid stevia), anmd whirl for about a minute or two (until thick, and all ingredients blended thoroughly. Pour into bowls, then refrigerate until dinnertime.

    We really like the perfect pancakes and recently I started adding unsweetened cocoa powder to them in a portion equal to the sweetener. My kids LOVE them! My nine year old went from eating two of them for breakfast to four. This is a boy who, due to ADHD meds, hadn’t gained a pound in two years and generally doesn’t have much of an appetite. He’s off the meds and eating GREAT!

    I just found Maria about 2 weeks ago and am slowly reading her books and gathering up supplies for my change to eating ME. My question for you is that I have a friend on FB that was diagnose with Fibromyalgia today and basically she was told to learn to live with it and do some sort of Fibro cocktail. I would like to gift her with one of Maria’s books, which would be the best for her to read. I thought either the one on the Metabolism or the one on keto adapted. Help me please so she can make a choice that will be good for her.

    I’m on my second day without diet coke (I’m embarrassed to hare how many cans I used to drink up until yesterday, but I quit cold turkey!) I got a soda streamer and enjoy the water, even without adding the stevia drops I also bought. You mentioned in Keto Adapted, Maria, that one shouldn’t drink with meals. How long before or after is it okay to consume carbonated water?

    Thanks for all your advice. I never thought I would be able to kick the diet soda habit, but I know I will!
