Easy Breakfast Bacon Pie

  • Preheat oven to 400 degrees F. Place 1/2 cup shredded cheese evenly the bottom of a 9 inch pie pan. Place in oven for 3 minutes or until melted. Meanwhile place the other 1/4 cup in a medium bowl. Add eggs, chives and salt. Stir well to combine. Pour over melted cheese. Place bacon slices in a weave pattern over the egg mixture. Place in oven to bake for 30 minutes or until eggs are set and bacon is crisp. Store extras in airtight container in the fridge for up to 5 days.

TESTIMONY OF THE DAY

I spoke at an event and a young mother told me she just found out that her 1 year old has Type 1 diabetes. She said the dietician at the hospital said they NEEDED carbohydrates and keto diets are dangerous. HOWEVER, I told her the facts and that I have copious amounts of Type 1 diabetic clients and that this is the way Type 1 diabetes need to eat!

One of my recipe testers is a Type 1 diabetic and she tests herself with my recipes so I KNOW my recipes are on par for Type 1s. She went from 50 units of long acting insulin to 15! AND her a1c is now 5.9!

She started to add carbs like sweet potatoes when she reached her goal weight BUT her a1c and need for units of insulin started to go way up again. Instead of adding carbs, we added fat to maintain her weight. There is no dietary need for carbohydrates!

For myself, when I hear negative feedback, I try to affirm what I do by allowing my hurt to be changed in my being, to a simple observational “Oh…”. Then I try to let a different thought settle in of what the other person doesn’t yet understand. That helps me more than I can tell you.

    Hi Maria! I love your work and hate to hear about such hurtful comments on social media. I love your cookbooks and blog and have greatly benefited from your advice! Weight loss is just a side effect of the healing that takes place on a ketogenic diet, but it has meant so much to me, just like recovering from panic attacks, ADD, and migraines. All of this has changed my life and made me so much more aware of the damage the Standard American Diet (SAD) causes people. It makes me crazy that low-fat diets are still being promoted and SAD isn’t seen as the glaring cause of so many life-threatening health problems.

    It seems like everyone who speaks out against damaging cultural norms gets attacked on social media. This should be taken as evidence that you are making a difference in people’s lives and are therefore a threat to the institutions that profit from leading people astray through misinformation. I certainly think there are powerful monied interests that profit from all the terrible dietary advice out there, including the mainstream weight-loss industry and pharmaceutical companies, as well as the junk food manufacturers. Thank you for all that you do in promoting the truth, and know that we support you!

    I am so sorry people have been cruel. I know you come from a place of love, and it should be obvious to even the most casual observer. You want us to be healthy, and if our bodies need to lose weight to do it then that is a natural consequence of becoming healthy.     Thank you for caring about your clients, and even caring about all of us who are not personal clients, but turn to your website and cookbooks on a daily basis for advise, inspiration, and great recipes. I know it’s hard not to take comments like that personally, but know that there are many more people out there who may not comment, but truly appreciate you. I own all of your cookbooks, and LOVE them. My type 2 diabetic husband is off insulin and statins, and has reduced doses of other medications. I have lost almost 25 pounds since Jan 1st. My 9 year old twins, despite being born 12 weeks early and having a VERY rough and sick start are now rarely sick, really smart (not just my opinion LOL, they test way above grade level in every subject), and have tons of energy. I truly believe it has a lot to do with the fact that their bodies aren’t burdened with tons of carbs, and they get plenty of healthy fats that make their brains and bodies strong! I see the way some of their friends and classmates eat, and it breaks my heart. And it shows on their little (or not so little. . .) bodies, too. Kids shouldn’t be overweight, and there is no need for them to be! My kids have grilled cheese or sandwiches on keto bread (or Mikey’s bread, which we love too!). They enjoy ice cream (in fact they are eating some right now), brownies (from your Quick & Easy Ketogenic Cooking book), and so many other foods. They have treats, just like other kids, but THEIR treats are “grow foods” (a term I taught them when they were really little), not junk! I recommend your books and website over and over to people I know. You have said over and over, also, that this way of life isn’t necessarily about weight loss. It’s about being HEALTHY, and who can say that’s a bad thing??? Anyway, know that you are very appreciated, and you touch many more lives than you will ever know.

    Truly and truly, Maria, your books and websites and wisdom saved my life. I stumbled upon your website in a search for information on low carb diets last year and honestly, everything is different now. I have lost 50 pounds and the depression and anxiety which have haunted me since I was young have finally stilled down to a whisper. I am not exaggerating; the first time I remember a period of depression was at age 8. I am now 58 and have struggled with weight problems, bulimia, obsessive thoughts and behaviors all my life…well, good gracious! Who knew that dietary changes could be so profound in building a life? When I say that your books and recipes are life-changing (and I have each and every one, including the pre-purchase of your next one!), it might make people smile and wonder. But it’s completely true. I’ll tell the world. Your ice cream is life-changing! Your chocolate torte is life-changing! Your zucchini tots are life-changing! I am sorry that we live in such a peculiar time when there are so many folks with a ready & negative opinion before they even bother to research a topic. The slander and negativity has become so entrenched in out culture and it’s hard to understand why some people would want to drown out the voice of hope and positivity. And why would someone want to use a bit of their life and time to criticize and hurt someone? Such a waste to tear down instead of building. Delete it immediately and go dance with your children.     This looks great, quick and easy. I am always looking for a new to cook eggs. As for your work and social media, it seems that the bad parts ate being screamed at all of us. What ever happened to live and let live, you are not forcing anyone. I for one just love your blog, recipes and the couple of books I have. You and other LCHF recipe bloggers have brought me my best success at this diet. I don’t like the processed low carb foods on the market, and am so thrilled to be cooking real food that tastes great, and the weight loss is steady. I appreciate all your writings about supplements too. Also, I know where to go if I get stuck in a plateau! But so far, since late last fall I have dropped many inches. Long way to go, but this old lady is thrilled with your work!

    Hi Maria: I too am very sorry that you have to endure such cruel comments. However, know that you are an amazing women and that you are helping many, many people. Our entire family embarked this journey of healthy eating 1 year ago. I myself have lost 50 pounds. My husband has been taken off of his cholesterol and high blood pressure meds. After much conversation with our Family Dr. she agreed to this and after seeing the results of his blood tests, etc. throughout the year she told him a month ago to keep on doing what he is doing. Now we have encountered another problem. Our 3 yr. grandson is dairy sensitive and I am having a hard time cooking for that. Some of your recipes use cream cheese–would substituting with coconut cream work. Also I need to bake with coconut flour as our granddaughter needs nut free lunches for school. Some recipes use honey for the sweetener. Do you have any suggestions on the conversion from honey to Swerve or monk fruit. For the past month I have been having trouble finding Swerve in our local grocery stores or health food stores. (live in Ontario, Canada) I am encountering many obstacles BUT refuse to cave in as I see so many health benefits doing this life style. Again I want to thank you for all your informative articles and your many recipes–keep believing in what you are doing. .

      For monk fruit they usually have a conversion on the box showing how to convert to sugar (which is 1-1 for swerve).

      I am very active and in maintenance. So I get about 1800 to maybe 2600 or so calories a day usually within a 4-6 hour window. 🙂

          Because it comes naturally and had benefits like autophagy were cellular repair and rebuilding occur when intermittent fasting. 🙂
