Testimony of the Day

“Hi Maria! I sent you a family before (May 2013) and our most recent family photo (December 2013). I have also included a picture of me at my highest weight (210 pounds) and a picture from 2 weeks ago. In July 2013, my husband thought he was having a heart attack and we went to the ER. It turned out to be acid reflux. The doctor said that he would probably have to stay on Prilosec for the rest of his life. I knew that couldn’t be true. There had to be other things we could do.

I had always cooked and baked for our family from scratch and we ate healthy foods but obviously it was not working for us. As I was researching different wheat free and sugar free recipes, I found you. We cut out wheat as that was a trigger food for him and sugar. I dropped 7 pounds the very first week! He started to feel better and was dropping weight as well.

We have changed our entire home to a grain free, sugar free home. Our oldest son came off medication for ADHD in January. He had been on it since 1st grade. He just turned 17 last Sunday. His acne has also improved from full blown break outs to 1 or 2 blemishes. Our middle son lost 8 pounds and we were not restricting his food. Our youngest has improved greatly in his behavior. We discovered that food dyes made him aggressive but now that we have eliminated sugar and grains, he is a different kid.

As of January, I had lost 35 pounds but, I had stalled. I was not exercising. My husband had lost 45 pounds but, he had also stalled. I went to the doctor for a physical and they noted the weight loss. My blood work was amazing except my bad cholesterol was a little high which he told me would go down with exercise. I also talked to him about the supplements I had read about in Maria’s books. He told me the ones he recommended from the list for me and I started taking a probiotic, omega 3, vitamin D . . . The doctor has this awesome scale that tells you fat%, fat mass, muscle mass, water content. He lets me come in every other week to weigh in and see my progress. He also sent me to a trainer to get a baseline fitness assessment and I started working out with her. My husband and I joined a gym and I am working out at least 3 times a week. I never would have considered myself athletic before. I was always active but, not really into fitness. Now I miss it when I don’t exercise. I feel better when I do.

Since January, I have lost 14.2 pounds of fat and gained 3 pounds of muscle. I have gone from 42% body fat to 36% body fat. I am still working and am not where I want or need to be yet. I have lost 2 inches off my neck! Who knew your neck could even lose 2 inches?!?! I have lost 10 inches off my waist, 7 inches off my hips, 4 inches off each thigh and 3 inches off each arm. I am starting to see definition again that I haven’t seen since high school. My wedding ring is loose . . . it has never been loose. I am tempted to pull my wedding dress out of the basement and try it on. The other day, I tried on a pair of pants size small and they fit! I will never go back . . . ever. As of this morning, from my heaviest, I am down 51 pounds and my husband is too! Thank you! Kristi T.

HEATH TIP: Wait 6 months after your weight has stabilized to get your cholesterol taken. When eat a keto-adapted diet, you lose weight by burning body fat rather than lean mass, like you do with low-fat diets.  For example, if you are losing 1 pound of body fat every four days, that is 3500 calories worth of animal fat into your blood as triglycerides. If you get your blood drawn in the middle of your well-formulated keto-adapted weight loss journey, there’s a good chance that your numbers will look “bad” to your doctor. Triglycerides may be very high since your blood is now full of them because they are getting released from your fat cells.

One staple that every cook should have in their fridge is Fish Sauce. It is a special ingredient that takes good food to amazing food.  Fish Sauce, mushrooms and aged cheeses have something called “UMAMI.” Umami is a pleasant savory taste produced by deviled eggsglutamate and ribonucleotides, chemicals which occur naturally in many foods. Umami is subtle and not generally identified by people when they encounter it, but blends well with other tastes to intensify and enhance flavors; it makes food delicious. Red Boat brand is traditionally fermented, not with wheat like most others. This bottle will last you a LONG time – you only use a few drops per dish, it’s strong stuff!

Deviled Eggs

Ingredients
  

  • 12 eggs
  • 1/2 cup guacamole OR my homemade baconnaise or homemade mayonnaise
  • 4 slices sugar free bacon
  • 2 TBS fresh shredded Cheddar cheese omit if dairy sensitive
  • 1 TBS mustard
  • Celtic sea salt to taste
  • OPTIONAL: Smoked paprika

Instructions
 

  • Place eggs in a saucepan and cover with cold water.
  • Bring water to a boil and immediately remove the pan from the heat.
  • Cover and let eggs cook in hot water for 11 minutes.
  • Remove from hot water and rinse with very cold water.
  • While the eggs are cooking, make the bacon.
  • Place the bacon in a large, deep skillet.
  • Cook over medium-high heat until evenly brown.
  • Crumble into very small pieces and set aside.
  • Peel the boiled eggs and cut lengthwise in half.
  • Remove yolks and place into a small bowl.
  • Mash egg yolks with guacamole/<g class="gr_ gr_140 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling" id="140" data-gr-id="140">baconaise</g>/mayonnaise, crumbled bacon and cheese.
  • Stir in mustard.
  • Season with salt.
  • Fill egg white halves with the yolk mixture.
  • Sprinkle with smoked paprika.
  • Refrigerate until serving.

I have been completely wheat free since june of last year, grain free and keto since january, I have lost 35 pounds and am feeling so much better.     Maria, I am currently breastfeeding a 9.5 month old and purchased your plan for breastfeeding mothers. I don’t want to go in to ketosis and dump a lifetime of poor habits in to my milk supply. As a result, I am not counting carbs. I have been gaining weight while trying to stick to your recipes and feeling a little crazy. I believe this may be due to my body storing the extra fats that I am eating since I am still a “carb burner.” The crazy feeling could be from carb/sugar withdrawal, I assume. Night time cravings are terrible for me! Is there anything I can do to alleviate these problems or am I stuck until I can go full tilt and get myself in to ketosis?

      You can go into ketosis, just watch portion sizes and add snacks as needed so you don’t lose a bunch of weight right now. 🙂

    When I stick to a grain free & sugar free eating plan I notice that my asthma has significantly improved. I have lost 10 pounds in about 2 months (would be more but I had a few set-backs!), but need to concentrate on my health more than how much weight I should lose.

    Can you be in ketosis but not lose excess weight?

    Do you still need to create a calorie deficit to lose excess weight?

    And even if you are careful about your carbohydrate and protein intake can you still consume too much fat so that the body doesn’t bother using it’s stored fat?

    Hi Maria,

    Is Nunaturals alcohol free nustevia the same thing as stevia glycerite? It has vegetable glycerine in it. This is all my store carries, so I bought it but I want to be sure it is the same thing. My whole family is getting on board with your way this week. We start on Thursday (my husband wants a normal cake for his birthday on Wednesday). I’m very hopeful that if compliant, this will change his life! Thanks for all of the incredible information!

            Ok. Thanks! It’s Pancake day on Saturday and I need to get my family to eat homemade syrup since maple syrup is out now! Made your pumpkin mixers for a quick breakfast and they were great! My three youngest children wouldn’t drink them so they had no breakfast. It’s going to be a tough transition even though they have been wheat free/refined sugar free for over a year now! Taking away honey and maple syrup is “going too far” according to my 14 year old! I think my husband has leaky gut and he has acid reflux and I’m hoping this way if eating will heal him because the man thinks he is dying. That’s how bad he feels all the time. He doesn’t listen to me so he just went to the doctor and she switched his reflux medication, but I believe strongly that a ketogenic diet will be the answer for him. Can we have kombucha? I thought that can aide in healing his gut? Sorry so long. You are so incredible for reading this!

            Thanks! Yes, I used to have bad acid reflux. Haven’t had a single problem in 8 plus years! I would skip the kombucha. Too much sugar. A good probiotic (or other fermented foods like bubbies pickles, sauerkraut, etc) and aloe can help heal his GI lining (in addition to the keto diet).

    Hi Maria,
    I seem to have gained weight since introducing Stevia Glycerite. Is it the amount I’m eating/drinking that is the problem? I’m guessing 2 TBSP daily – I like it in my hot chocolate and in my tea (mostly tea.) I have also made other changes, like re-introducing cheese. It’s not a lot of weight, and could be water retention too. I guess my question is: Could 2 TBSP of Stevia Glycerite a day affect my weight? THANK YOU.

    Thanks for all your help on this journey! After losing ~15 lbs, I’ve kind of stalled. I’m sticking with it though. However, y body feels like it’s lacking something. I’m getting hungry more often again despite minimal carbs and good, healthy fats and proteins. I’m not taking any supplements right now and have been considering signing up for a consultation. Do you think that may be the problem?

    Hey Maria! I’m the Amber in your above testimony but I have to add that I got my parents on it now too . My mom has had the worst sugar problem ever. She always had a huge basket of candy in her room that I used to sneak into lol. But its gone now! I’ve made her a couple batches of your snickers and she says they are soooo satisfying. They really are the best candies. Chocoperfection is awesome! But she’s down about 10 lbs in the last month and I continue to feel great! Thanks again Maria! I’m spreading the word!

    The jewelry is absolutely gorgeous! It makes me happy just to look at it.

    Low carb is the only way my body likes to eat. I had terrible burning pain in my left shoulder and limited mobility as well for months. Going wheat free eliminated the pain. Now I have to get back on track with the rest! Going grain and sugar free eliminates my brain fog, moodiness and helps my digestion issues.

No more reflux, lost 25 pounds and feel wonderful! Working on getting my husband and two adult children and my grandson to come on my journet with me!     Since starting my journey to this new lifestyle I have been feeling so much better. I use to be tired and irritable quite often which isn’t what I needed to care for both my children under 4 years old. I have been doing the trasnition over to this lifestyle slowly because I’m still breast feeding and I didn’t want to risk large amounts of toxins entering my milk. I have both of my girls on a gluten free diet and sugar free with me. I still need to win over my husband but I just bought Maria’s new book and I’m hoping to get him to read it. He has liked the suppers I have made but I haven’t won him over on the bread yet. This lifestyle is so amazing and I can’t express how much better I feel. I have suffered from candida since I was about 10 years old. I use to have fungus growing under one of my finger nails. Specialist can up with that I wa sucking on my finger, which I never did. I eventually saw a natural path and he helped me on my way to heal and Maria has made it even easier to stick to this lifestyle without cheating. Thank you Maria!!

    Going gluten free 3 yrs ago was HUGE for me. It stopped my weight gain caused by low thyroid function. But more important than that, it stopped the muscle and joint pain I was experiencing! Now, 6 wks ago, I started a grain free, sugar free, keto lifestyle. My acne is slowly clearing up, my blood sugars have massively improved. I have lost 8 lbs in 40 days. And sugar is no longer running my life. Yes, it is a drug!     I have so much more energy, it’s been a while since I felt the need to take a nap. the weight is coming off, finally. and I am losing less hair and my mood and the whole outlook into life has changed incredibly.

    I have been “semi” low Carb for about a little over 2 years now. I gave myself a “complete break” between Christmas and New Years last year and ate and drank everything I wanted. I felt so sick with headaches, belly aches and horrible acid reflux. that’s when it finally hit me that it’s just not worth it.     I like to dd a little coconut vinegar to my deviled eggs and even dill pickles for extra tartness and balance that out with a touch of swerve!

    I made the Baconnaise and used it in a salmon salad (instead of chicken salad) for my son’s lunch. He said it was the best salad I ever made and requested it the next day. 🙂 Also, those hard boiled egg bunnies are adorable!!!

    My son eats differently at his dad’s so when he comes home he has acne. It clears up after being at my house for a few days. My face did the same thing once I started eating the Maria way. I can’t tell you how bad my acne was as a teenager – and my parents tried (almost) everything to help me have beautiful skin. I wish I had known about this years ago!

    I found your cookbooks at the clinic where I did an HCG protocol. I have struggled with weight loss my entire adult life. I have done every “diet” that has come along and nothing ever stuck. While I just finished my maintenance phase of the protocol and heading into “life” phase I have found your recipes to be a godsend. My husband loves to cook so I have him trying different ones and he is in love with your Seafood Risotto – yummy. So grateful for all the education. I have 3 of your books and find the information in them on the “why” certain things are good or bad and what they do to our body to be the most valuable. Not your average cook book for sure. You clearly have made this lifestyle your life’s work and I thank you for sharing.

    I’ve now lost 10lbs, and my husband absolutely loves the recipes we been cooking. Reading the labels in the grocery store yesterday, and a man stopped me and asked what I was looking at because he noticed that I was reading every label. We stood there for about 30min and I showed him how to read the labels. It’s nice when someone shows interest on becoming healthy.
