There is just something so comforting about a slow cooker full of soup in the winter.  Letting it cook all day as the delicious aroma fills your home and then enjoying a nice, hot bowl of soup in the evening… Perfection!   This Creamy Reuben recipe takes a popular and classic sandwich and transforms it into a rich, creamy soup.   My husband has been known to take down an entire slow cooker worth in a single day.  This recipe has never been featured anywhere outside of my cookbook until now.  This recipe and other delicious recipes like it can be found in my cookbook.”

CREAMY RUEBEN SOUP

 

CREAMY RUEBEN SOUP by Peace, Love and Low Carb

Ingredients
  

  • 1 Medium Onion – Diced
  • 2 Ribs Celery – Diced
  • 2 Large Cloves Garlic – Minced
  • 3 Tbs. Butter
  • 1 lb. Corned Beef – Chopped
  • 32 oz. Beef Stock
  • 1 Cup Sauerkraut
  • 1 tsp. Redmond Real salt
  • 1 tsp. Caraway Seeds
  • ¾ tsp. Black Pepper
  • 2 Cups Heavy Cream
  • 1 ½ Cup Swiss Cheese - Shredded
  • 2 Tbs. Peace and Love

Instructions
 

  • Heat slow cooker on high setting.
  • To a large sauté pan, over low-medium heat, add onion, celery, garlic and butter. Sauté until soft and translucent. Transfer to slow cooker.
  • To the slow cooker, add corned beef, beef stock, sauerkraut, sea salt, caraway seed and black pepper. Cover and cook on high for 4.5 hours.
  • Add heavy cream and Swiss cheese and cook 1 additional hour.

    Hi Maria,
    I just bought Keto Adapted, so much great info! Thank you! Grain Brain helped motivate me to go keto but I’m so glad I found you, you dig even deeper. Your book, site and recipes have helped keep me going. At 45 I feel better than ever and keeping up with my 5 year old son is a true blessing! I’ve been in ketosis for a month now and my one concern is that I should have lost more than 5 lbs by now. I didn’t cut out dairy, could that be a reason? My MD did a blood panel and my thyroid along with everything else was normal so I don’t think it’s my thyroid. What are some other reasons I wouldn’t be losing? I’m exercising more than ever balancing my diet with plenty of fat. Maybe you’ve written about it and you can point me to it.

      I find that clients that cut out dairy for the first month or so have better results, yes. Make sure to get 70-80% of calories from fat. Also, to ensure weight loss, watch calories (try for maybe 1300-1400). You can also try intermittent fasting. Skip dinner one evening (should be easier now that you are keto adapted). This should get the weight loss going faster. 🙂

    The math doesn’t add up for the servings – with only 32oz (4 cups) of stock, this can’t make 14 1-cup servings. Is it a typo and actually makes 4 servings? (my guess)

    Could you please also update the nutritional information if the servings change?.

      What’s listed should be pretty close. There are 3 cups stock, 2 cups cream, 1 cup sauerkraut, 1 pound corned beef, etc. It adds up to close to 14 cups. 🙂

    I’m a big fan of your site and also PL&LC-I have possibly a silly question but I’ll ask anyway. Is the corned beef raw or the cooked kind you get at the deli- I would think that cooking it that long would be done with raw beef- is that correct?

      Since it is a soup I would think you could use either. The already cooked shouldn’t dry out being in the cream and stock.

    Hi maria I was curious to know what you have to say about quest protein bars? Are they healthy? Do they stall ketosis or raise blood sugar? My favorite is the coconut cashew and I like having one as a treat every other day or so so I was wondering what your take on these bars is since I’ve been hearing stories that they can raise Blood sugar.

    Hello! Have you made this soup on low for 6 or so hours or does it work better on high? I also saw the comment regarding the corned beef… Have you used the deli kind? My initial thought was to cook a corned beef and chop it up in soup but deli would be faster! Thanks and we enjoy your recipes!

    First and foremost…Maria thanks so much for your Blog! I have been working with this no carb eating since August and I am very happy with how I feel and my weight loss.
    I have made the cream of Broccoli soup and put it in the freezer. It heats up great when left to thaw out first. thanks so much

    Hope I did it okay. Cut raw uncooked corned beef into chunks, and drained the sauerkraut. We love ruebens.
