Testimony of the Day

“I completed day 28 since switching to the Keto-Adapted lifestyle and was amazed. When I started I had a whopping 200 excess pounds to shed. Knowing the last time I was at my goal weight was 27 years ago I was terrified that this would not work for me but I have followed the program diligently and it has already paid off. I have shed 26 pounds in 28 days and am feeling better than I have in years. I am 62 years young, have multiple health issues and have been extremely sedentary for decades. This 26 pounds has come off without exercise!

I am so encouraged as I know that I will surely shed the rest of my excess weight. Having dropped 26 pounds with no exercise or supplements to support me just think what will happen as I add those in as part of my health care regime.

Thank you soooo much Maria for what you are doing. God Bless – KaraAnn”

Hormones run our metabolism

When I start talking to clients about our hormones and our weight, they usually get a surprised look on their face. What do hormones have to do with our weight? A hormone is a chemical messenger from a cell in the body. A hormone is produced by almost every organ system and is secreted directly into the bloodstream. Hormones signal certain cells to perform certain functions. Hormones are in charge of so many important pieces of our everyday life; our monthly mood swings, sex drive, blood sugar levels, muscle tone, fat burning ability, metabolism, immune system…the list is huge! Hormones play a role in everything from good sleep and good sex to headaches, stress, fatigue and weight gain.

The struggle to lose weight can be very difficult, and many feel that there has to be a reason that the weight is not coming off. It is true that hormonal imbalance affects some overweight individuals. Hormones do play a role in weight loss and gain, but the role is dependent on the individual, and his or her dietary and exercise choices.

Hormones can affect our mood and energy amount. We, however, affect hormones. Our way of life plays a huge role in the hormonal makeup inside us. For example, if a person is inactive, certain hormones decrease, such as testosterone. Testosterone is a hormone that works to increase metabolism, and therefore regulate weight and encourage weight loss. On the other hand, a more active person will have a greater number of chemical reactions in the blood, and help enhance the body’s hormonal balance. This happens so the body can cope with its own need to adapt to the stress during physical exertion. As a result, the body will create balanced hormones, which boosts metabolism, and lead to weight loss. By exercising regularly, getting adequate sleep, and eating the right foods, the body can create harmony with your hormones.

Ghrelin, sleep and liquid calories!

Scientists believe they have discovered why people get hungry at mealtimes, why dieters who lose weight often gain it back, and why stomach surgery helps obese people lose a great deal of weight. One main reason is the hormone called ghrelin, which makes us hungry, slows metabolism, and decreases the body’s ability to burn fat.

Ghrelin levels increase before meals and drop afterward depending upon what you consume. Volunteers given ghrelin injections felt extremely hungry, and, when turned loose at a buffet, ate 30 percent more than they did previously. Dieters who lose weight produce more ghrelin than they did before dieting, as if their bodies are fighting against starvation. By contrast, obese people who have gastric bypass surgery to lose weight end up with low levels of ghrelin, which helps explain why their appetites decrease noticeably after the surgery.

People who fail to sleep properly over-stimulate their ghrelin production which increases the desire for food. Lack of sleep also reduces the production of leptin which is the body’s appetite suppressant. So in short, if you don’t get enough sleep, the hormones in your body get all out of whack and you think that you’re hungry when really you don’t need that food.

Getting the right amount of sleep can be the first step to making sure that you’re getting the ghrelin and leptin balance that your body needs to naturally maintain a healthy weight. Getting 8 hours of quality sleep every night will help you naturally balance out your ghrelin and leptin levels …not making up for it on the weekends. I say “quality” because many people suffer from sleep apnea and don’t know it. If you have been told you snore, kick, talk, or stop breathing in the night, have your doctor check for sleep apnea. Sleep disorders will keep you from getting into REM sleep which is when our hormones are balanced. Allergies are a main cause of sleep apnea. You don’t have to be overweight to suffer from it.

This information has helped scientists harness information to assist people in losing weight. Scientists have created an anti-obesity vaccine which reduces the production of ghrelin which helps reduce cravings. Yes, these drugs are on the market, but instead of putting a huge dent in your wallet, you can start to balance ghrelin by following a few easy steps.

2013_07_29

Ghrelin creates our ravenous cravings for food. Our bodies increase this hormone before eating, whether it is when your clock strikes 12 noon at work or you walk by a bakery and the smell of doughnuts stimulates the production.

Read more in Secrets to a Healthy Metabolism which is now on sale! Click HERE to find. There are charts included in the book on which foods to consume and food to steer clear of. Follow the steps in Secrets to a Healthy Metabolism to keep your ghrelin levels in check, but I’ll give you a hint, I do not recommend liquid calories to balance your ghrelin levels!

“HEALTHIFIED” COOKIE DOUGH CUPCAKES
CHOCOLATE CUPCAKES:
1/2 c. coconut flour
1/3 c. unsweetened cocoa powder
1/2 c. Swerve (or erythritol and 1/2 tsp stevia glycerite)
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 c. unsweetened almond milk
1/2 c. coconut oil or butter
5 eggs
1 tsp vanilla
COOKIE DOUGH FROSTING:
1/2 cup butter or coconut oil
1/2 cup Swerve (or erythritol and 1/2 tsp stevia glycerite)
8 oz cream cheese, softened (or coconut cream if dairy allergy)
2 TBS almond milk (or more to thin the frosting)
1 tsp vanilla extract
2 The Good Chocolate Bars, chopped

Preheat your oven to 350 degrees F. Combine all the dry ingredients and blend well. Add the dry and wet ingredients and blend until smooth. Grease and fill a cupcake tin 2/3rds full. Bake for about 20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Cool the cupcakes before frosting.

To make the frosting, place the butter in a small saucepan and melt over medium-high heat (heat until it turns brown, not black). Add in natural sweeteners until dissolved and the mixture bubbles just a little. Using a hand mixer on low speed, add in cream cheese, almond milk and vanilla. Mix until combined. Once the mixture is totally cool (you don’t want the chocolate to melt), stir in the chunks of ChocoPerfection. Use to frost cupcakes. Makes 12 large cupcakes.

    Hi Maria,
I love your blog and I have seen great improvements in my health since I bought your book. So thank you!

I have a question, concerning fertility and diet. I read a Harvard University research that said animal protein causes infertility and on the other hand whole grains, legumes etc promote it. I would really love to know your opinion on this, since I admire it and I definately do not want to bring grains back in to my diet.

PS. Don’t worry I m not for the giveaway, It would be a little difficult to send it to Greece 🙂

  • Heather says:

ChocoPerfection bars are my weakness. When I am able to buy them, I ration them like they were gold. I would LOVE to win a box!

I made your ‘Cornbread Stuffing’ yesterday for Thanksgiving and received rave reviews from some very picky eaters. I loved it, and I have never liked stuffing. The ‘cornbread’ was so good, my son requested that I bake another loaf or 2 for him to take back to college as I had to stop him from eating all the crumbled bread before I added the other ingredients.

  • Natalie says:

  • Hi Maria,
I have just finished reading your metabolism book. It is really great. I also have found your blog very enlightening. For more than just weight loss, it is so important to get the word out about the negative impact sugar has on our health. I’ve been saying to my husband for the last few years, why, why, why do you think so many people are now being diagnosed with cancer; many of whom are women my age (in their early 40’s that are being diagnosed with breast cancer). I’m starting to understand the “why” thanks to you. Growing up during the peak of the low fat craze, I’m happy to have started eating low carb about 10 years ago and quickly realized it was much better for me. But, you have informed me on many of the other additives in our foods that also need to be phased out. Thanks for all that you do and the information you share.

So far, I’ve enjoyed all of your recipes that I’ve tried. Most recently, I’ve been interested in making the Cookie Dough Dip. I made your animal crackers last weekend, and think they would be a wonderful item to dip. I would love to win the ChocoPerfection bars and use them in the cookie dip recipe. I can’t tolerate Maltitol at all, so these look like a wonderful way to get one of my favorite items without the discomfort. Yay Chocolate!!

  • Oh goodness, another chance to win a box of these “heaven in a gold wrapper” bars 🙂 I would love to try for another chance to win! My daughter and I are currently addicted to the nutri-grainless bars!! We love them. We make usually 2 trays and them pack them in the fridge. They are perfect for breakfast or for an on-the-go snack. I make ours a little bigger so I get 6 per batch. I have found Smuckers strawberry preserves made with Splenda so that is what I use for the filling. I also make a cream cheese/Swerve icing to coat some of them with too. Oh so good!

I would LOVE to win the chocolate! As a self confessed carb-a-holic I love to bake. I really love your cinnamon rolls; they give me the intense satisfaction of baking as well as a bread-like delicious treat. The bonus is that it’s not really a treat and I can make them for breakfast on a leisurely weekend without guilt. The bread recipe is also great as bread (i like to add pesto not marinara). Thanks to your blog (and others in the LCAF group) I’ve lost 30lb in the last few months, which means I can look forward to being a stunning bride not a tubby bride. So, chico-win or not, THANK YOU!

  • Oh my…I made these yesterday, will post a pic on my facebook….These were the bomb! I love chocolate but hubby doesn’t…BUT he said these were fabulous! The only deviation I did was add chopped pecans to the frosting. It was very German Chocolate Cake tasting, which is my favorite. This will be a regular treat for me.

I can not thank you enough for your recipes. Since Sept. 28th, 2012 I have been eating a low carb, no gluten/grain diet AND COULD NOT BE HAPPIER! I have dropped several inches in my waist and went from a tight 12 to a 8! I can’t believe I can still have treats that taste so good. I can’t wait till your new book is available on hardback so I can purchase!

    Thanks again!

I’m dreaming of ChocoPerfection bars. We are new to your blog, but in the last 2 weeks we’ve made about 15 of your recipes. They’ve all been amazing. But the ones that we’ve made more than once are the Energy Power Bars, your waffles, and the cereal. Oh, and the cinnamon rolls, and the cookies, and the Reeses Muffins.

  • Heather says:

Yum! I made your protein balls and loved them. Coconut and almond flours are on their way to my door step. Excited to try some of your other treats. Thank you!

    Hello Maria,
I am so intrigued by all I am reading. I recently downloaded “The Art of Healthy Eating” to my Kindle and am learning so much. I have been a clean eater for five years but always kept grains and fruits as a major part of my diet. It is really hard to deny all these facts. I am 42 and have lived my whole life with social marketing dictating what I should eat. You are so right…Knowledge is Power! I have enjoyed most the basic staple substitutions …cauliflower rice and zucchini spaghetti. Going to start baking soon and am looking forward to the “apple” crisp. I would LOVE to be the winner! I promise I will share them!
    Thanks for everything!

OKay this is the 12th try.
To pick just one dish is impossible, to pick the top 12 is almost impossible. What makes it hard is more than half of our meals are yours.

If breakfast isnt a scrambled egg or an omelet, It is either your waffles (insert recipe here since I have a waffle day once a month and make several varieties), a pancake (again insert recipe) one of your cereals (hot and cold) or one of your shakes if we want to just find something quick.

Lunches if not having one of your stir fries or mainly veggie dishes, are a sandwhich on one of your “breads” or waffles/pancakes being used as bread. One one of your salads.

Dinner is mainly either a crock pot recipe since they are soo simple (hubbys favorite is your pulled peanut butter port while mine is your morrocan beef). Or it is something slightly more elaborate such as several of your meals put together to make main dish and sides.

But I think for a favorite favorite I would have to say it is a tie between your Pumpkin Whoopie pies and your Amazing Cinnamon Rolls. I can choose between them because out of all your recipes I have had so far they all taste amazing, however hands down these to taste exactly like if not better than thier original counterpart. If I was not watching my weight or diet, Honestly I would still go out of my way to by all of the ingrediants to make these two recipes. I dont know anyone who can taste the difference and so far havent thought these taste way better than ones they currently eat or that they can remember eating. THAT is what makes them beyond the best. It doesnt taste remotely close to healthy and I feel ZERO guilt when I eat them.

Thank you for everything! You are AMAZING!!

I know I’m too late for the drawing, but I had to state that this is the BEST sugar free desert I’ve ever tried. I ate 3 when I first made them. Just found this site and really like everything I’ve tried so far: Doro Wat, Creole Rice, Pumpkin Bread and these. All were wonderful! Thank you!

  • Tammy says:

    Who on the chocolates?

  • Kim says:

Just made these and we all thought they were really tasty. One thing i would like to do is increase the moistness of the actually cake part. How would you suggest doing that? I also only used on bar for the frosting and that seemed to be plenty!

  • Dyanne says:

I am almost out of chocolate from making your very addicting chocolate cupcakes and cookie dough frosting!! They are even better the next day. But can’t keep them any longer than that, they are so delicious. That brown butter cream cheese frosting is to die for.

  • Kristi says:

Late to the game on this one, but still wanted to share how much I LOVE this recipe. My entire family devoured these! Thank you!

  • Anonymous says:

    Maria,
At which point do you turn off heat for the frosting?
    Thanks,
    Diana

  • molly marie says:

just made these and instead of frosting I had them with coconut bliss coconut ice cream – delish!

I can’t wait to try these tonight! Also, is that your kitchen counter under the cupcakes? Beautiful, love it!!! Do you remember where you purchased it?

  • Joan says:

My 13 year old son and I started this new “healthified” way of eating in July. I am so proud of him, this is not easy for a teenager to do. He misses certain things, one being cupcakes..soon I will make him the “healthified” cookie dough cupcakes. He will be in heaven..I have a feeling I will be too! 😉 I have had one ChocoPerfection bar and they are a great tool to use towards a “healthified” way of eating. 😀

  • Shannon Chalden says:

I can’t wait to try these cookie dough cupcakes. I can’t believe how healthy they are! I just found your site by way of DJ Foodie’s blog. I’d love to win those chocolate bars, too! They sound great!!!

  • Sarah says:

Just made these today…..WOW. They were amazing, the kids loved them….:)

  • Anna says:

    Hi Maria
Made these the other day and they were great! I am going to be making these cupcakes for my son’s 1st birthday party next month and would also like to make him a miniature cake with this recipe to dig into to. I bought a 6″x2″ cake pan – what would you recommend as far as adapting this recipe to bake in the cake pan? Would I just halve the recipe and bake at same temperature and time? Any advice you have would be great – thank you!

    • cemmerich says:

I would bake just a bit longer as a cake. Just test like normal with a toothpick in the center. 🙂

  • Tiara says:

I just made these and they are so perfect! Recipe is amazing, thanks for sharing 🙂

  • Vanessa says:

Can I use bakers chocolate instead of those disgusting choco bars? Thanks.

  • Lynda Murray says:

Hi Maria, I love the sound of the cookie dough cupcakes, but I hate the taste of coconut flour. Can I substitute almond flour for the coconut flour, and if so, should it be the same quantity?

  • Karen Anthony says:

I appreciate the hard work you put into your recipes! You generously share them, that’s one reason I bought your cookbook, to thank you.
I’d love to win chocperfection bars. Karen
